Biscuits with Turkey Sausage Gravy





Ingredients:


1 tube (16.3 ounces) large refrigerated flaky biscuits


1 pound Italian turkey sausage links, casings removed


3 tablespoons butter


3 tablespoons all-purpose flour


1/2 teaspoon ground mustard


1/4 teaspoon salt


1/8 teaspoon pepper


2-1/2 cups milk


1 tablespoon Worcestershire sauce


Directions:


Bake biscuits according to package directions. Meanwhile, crumble sausage into a large saucepan; cook over medium heat until no longer pink. Drain and keep warm.


In the same saucepan, melt butter. Stir in the flour, mustard, salt and pepper until smooth. Gradually add milk and Worcestershire sauce. Bring to a boil; cook and stir for 2 minutes or until thickened.


Stir in sausage; heat through. Place two biscuits on each serving plate; top with gravy. Yield: 4 servings.








Turkey Sausage Jambalaya





Ingredients:


3/4 pound reduced-fat smoked turkey sausage, cut into 1/4-inch slices


1/2 cup chopped onion


1/2 cup chopped green pepper


1 teaspoon minced garlic


1 tablespoon canola oil


1-1/2 cups water


1/2 cup uncooked long grain rice


1/4 teaspoon salt


1/4 teaspoon cayenne pepper


1/4 teaspoon hot pepper sauce


1 can (14-1/2 ounces) diced tomatoes with green chilies, undrained


1/4 pound uncooked medium shrimp, peeled and deveined


Directions:


In a large saucepan, saute the sausage, onion, green pepper and garlic in oil until vegetables are tender. Stir in the water, rice, salt, cayenne and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender. Add the tomatoes and shrimp; cook and stir until shrimp turn pink. Turkey Loaf (with rice and salsa)





6 servings





1/2 cup cooked rice (preferably brown)


1 tbsp. olive or vegetable oil


1 small onion, chopped


2 red and/or green bell peppers, chopped


1 lb. extra lean ground beef and/or ground turkey breast or ground chicken


1 cup chunky salsa


1 egg


3/4 tsp. salt


1/2 tsp. ground black pepper





Preheat oven to 350F.





Heat oil in a small skillet over medium heat. Add the onion and bell peppers and cook for 5 minutes or until tender.





In a large bowl, combine the meat, salsa, egg, salt and black pepper. Add the vegetables and rice. Place the mixture in a roasting pan and pat into an oblong loaf.





Bake for 45 minutes or until a meat thermometer inserted in the center registers 160F. and the meat is no longer pink.








Turkey Tomato and Mozzarella Lasagna








2 large onions


4 large garlic cloves, minced


2 Tbsp olive oil


1 1/2 pounds ground turkey


2 carrots, chopped fine


1 large red bell pepper, chopped fine


1 28 oz can whole tomatoes


1 1/2 cups dry red wine


1 1/2 tsp dried basil, crumbled


3/4 tsp dried thyme


1/4 tsp dried hot pepper flakes


1/8 tsp ground allspice


15 ounces part-skim ricotta cheese


1 large egg, beaten slightly


2 scallions, chopped


12 sheets of dry (no boil) sheets lasagna pasta


12 ounces part-skim mozzarella cheese, grated


1/4 cup freshly grated Parmesan cheese





Cook onions and 3/4 of the garlic stirring occasionally over moderate heat. Add turkey, carrots, and the bell pepper . Cook stirring to break up the turkey.





Stir in tomatoes, wine, herbs, spices and salt and pepper to taste. Stir in remaining garlic and simmer for 5 minutes.





In a bowl stir together ricotta, egg, scallions, and salt and pepper to taste. Pour 1 cup sauce into a baking dish and cover with lasagna sheets. Spread about 2 cups sauce over pasta. Drop one third ricotta mixture by spoons over and spread with a spoon. Sprinkle with mozzarella and layer two more times doing the same thing.





Sprinkle with remaining Parmesan and mozzarella and bake covered with foil for 30 minutes. Remove foil and bake 10 minutes more.








Country Style Turkey Sausage Patties Recipe








Yield: 8 servings





Ingredients:


Nonstick spray coating


1 slightly beaten egg white


1/4 cup finely chopped onion


1/4 cup finely snipped dried apples or 1/2 cup finely chopped fresh apple


3 tablespoons quick-cooking oats


2 tablespoons snipped fresh parsley


1/2 teaspoon salt


1/2 teaspoon ground sage


1/4 teaspoon ground nutmeg


1/4 teaspoon pepper


Dash ground red pepper


8 ounces lean ground turkey breast or sausage





Instructions:


Spray an unheated large skillet with nonstick coating; set aside. Combine egg white, onion, apples, oats, parsley, salt, sage, nutmeg, pepper and red pepper in a medium bowl. Add turkey and mix well. Shape mixture into eight 2-inch diameter patties. Heat skillet over medium heat. Cook patties 10-12 minutes or until meat is no longer pink and juices run clear, turning once. Drain off fat.





Guests enjoy these patties and like knowing they are low fat.





Mix all ingredients in a bowl; form into 3/4 inch thick patties. In a cast iron skillet over moderate heat, cook sausage until center is no longer pink.
