Ingredients
16 ounces turkey breast , chopped (cooked)
2 stalks celery , chopped
1/8 cup onions , chopped
1/8 cup pecans , chopped (I used glazed)
1 medium apple , chopped
1/4 cup dried cranberries
4 tablespoons reduced-calorie mayonnaise
Directions
1Mix all ingredients together.

Fry chopped vegetables. Add mixed herbs, or herbs of your choice (dried or fresh if you have them) I prefer tarragon with poultry. Add a bit of chicken stock (cube will do) and allow to heat through. Add some lemon juice, and if liked soy sauce or mushroom ketchup. Add creme-fraiche at the end to thicken sauce and serve with boiled, whole grain rice.

Turkey Tetrazzini
2-10 oz. cans of any type chicken soup, condensed (Note- NOT cream of chicken soup---something like chicken noodle or chicken with rice soup)
1 cup milk
6 cups cooked spaghetti (12 oz. uncooked)
4 cups boned chicken or turkey (Note- allow about 1/2 cup boned chicken per med. piece)
1 or 2 small cans mushrooms (Note- 4 oz = 1 cup, 1/4 cup= 1oz)
1/2 cup Grated cheese (optional)
Blend soups and milk. Mix in spaghetti, chicken, and mushrooms. Stir in cheese, if desired (about 1/2 cup cheese). Put in a greased casserole dish. Bake at 350 F until bubbly and browned, about 2 hours or so. May be warmed in a pan on the stove later or frozen for future use. Serves 8-10.

mix with tika masala cooking sauce and you have a lovely curry medium hot,so even kids can eat it
coat in breadcrumbs and fry serve with salad and a good mustard and honey dressing
TURKEY BREAST SALAD
5 c. cooked turkey breast, cubed
2 c. pineapple chunks, drained
3/4 c. slivered almonds
1/2 c. coconut
2 c. green grapes
2 c. diced celery
1 c. mayonnaise
1 c. sour cream
Combine all ingredients. Mix mayonnaise and sour cream together, pour over ingredients. Chill well before serving.

chop the turkey up and mix it with mayo. Add 2 slices bread and some lettuce!
