Southwestern Turkey and Corn Chowder
2 cups cooked cubed turkey
1 medium onion, cut into thin wedges
1 tablespoon vegetable oil
2 teaspoons ground cumin
2 (14 1/2-ounce) cans chicken broth
2 cans whole kernal corn, drained
3/4 cup salsa
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
2 tablespoons minced fresh cilantro
2 tablespoons cornstarch
2 tablespoons cold water
Shredded Monterey Jack cheese
In a 3-quart saucepan, onion in oil until soft. Stir in cumin. Add broth, corn and picante sauce; bring to a boil. Reduce heat; add turkey, cover and simmer 15 minutes. Stir in peppers and cilantro.
Combine cornstarch and water until smooth; stir into soup. Bring to a boil; cook and stir 2 minutes or until slightly thickened. Spoon into bowls; top with cheese if desired.
Makes 7 servings (about 2 quarts)

1 pound turkey breast tenderloins, cut into 1/4 inch slices
1 medium onion, chopped
1 tablespoon vegetable oil
1 (14.5 ounce) can chicken broth
1 (10.75 ounce) can condensed cream of celery soup, undiluted
2 cups frozen mixed vegetables
1/2 teaspoon lemon-pepper seasoning
3 cups uncooked extra-wide egg noodles
DIRECTIONS
In a large skillet, cook turkey and onion in oil until turkey is no longer pink, about 6 minutes; drain. Combine the broth, soup, vegetables and lemon-pepper. Add to the skillet; bring to a boil. Stir in noodles. Reduce heat; cover and simmer for 10 minutes or until noodles and vegetables are tender.

Turkey Minestrone --
INGREDIENTS
2/3 cup chopped onion
2 tablespoons vegetable oil
1/2 pound ground turkey
1/2 pound hot Italian turkey sausage links, casings removed
1/2 cup minced fresh parsley
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
2 (14.5 ounce) cans Italian stewed tomatoes
6 cups chicken broth
1 medium zucchini, sliced
1 (10 ounce) package frozen mixed vegetables
1 (16 ounce) can kidney beans, rinsed and drained
1 1/2 cups cooked elbow macaroni
2 tablespoons cider vinegar
1/2 teaspoon salt
1 pinch pepper
DIRECTIONS
In a large kettle over medium heat, saute onion in oil until tender, about 4 minutes. Add the next six ingredients; cook until meat is no longer pink. Add tomatoes, broth, zucchini and mixed vegetables; cover and cook on low heat for 5 minutes. Add beans, macaroni, vinegar, salt if desired and pepper; simmer for 3-4 minutes or until heated through.
What is a really good Turkey Chowder Recipe??
Use the same recipe for clam chowder and use turkey instead of clams and more celery and use chicken stock and don't forget
for the flavor of bacon and cup of corn starch for thickening agent ,not to thick,salt and pepper to taste.
