INGREDIENTS:
Sauce
3 tablespoons butter
5 tablespoons flour, sifted
1 cup milk
1/4 teaspoon celery salt
1/4 teaspoon lemon juice
1/4 teaspoon Worcestershire sauce
1 teaspoon grated onion
1/4 teaspoon salt
1/8 teaspoon pepper

2 cups turkey, diced (may use chicken, ham or fish)
1 cup croquette sauce
salt and pepper to taste
3/4 cup bread crumbs
1 egg, beaten
PREPARATION:
Sauce: In saucepan over medium-low heat, melt butter; add flour. Blend thoroughly, until smooth and bubbly; add milk, celery salt, lemon juice and Worcestershire sauce, grated onion, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Cook until thickened, stirring constantly. Makes 2 1/2 cups sauce.
Combine diced turkey with 1 cup of the sauce, salt and pepper. Shape into balls. Dip in crumbs, then in egg, then again in crumbs. Fry in deep fat at about 360掳 to 370掳. If remaining sauce is too thick, thin with a little milk and heat through. Pour remaining sauce over the finished croquettes; serve hot. Chopped pimientos, finely chopped green pepper, or chopped mushrooms may be added to the croquettes.

1 pound cooked %26amp; deboned turkey shreaded (can use ground turkey)
1 small onion chopped
1/2 cupbread crumbs (set bread out to let dry out)
salt and pepper
Mix with 1-2 eggs
fry on med heat in 1/4 inch of oil till golden brown on both sides
serve withsemi sweet topping ( I use blackberries cooked in a sauce pan)
Turkey Croquettes Recipe
6 tablespoons butter
1/2 cup flour
1 cup milk
1 cup chicken broth
2 teaspoons lemon juice
2 tablespoons snipped parsley
2 teaspoons grated onion
1/2 teaspoon celery salt
Dash each pepper, paprika, and nutmeg
4 cups ground, cooked turkey
3/4 cup fine bread crumbs
2 eggs mixed with water
Flour, for dredging
In a medium-size saucepan, melt butter. Blend in flour and add milk and chicken broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.
Add lemon juice, snipped parsley, and onion. Stir in celery salt and a dash each of pepper, paprika, and nutmeg. Cool.
In a large mixing bowl, combine sauce with the ground turkey. Chill thoroughly. With wet hands, shape mixture into balls. Roll balls one at a time in bread crumbs.
Lightly shape balls into cones. For each croquette, dip it into the mixture of egg and water, then roll in bread crumbs. Again, dip croquette in egg/flour and roll in bread crumbs. Fry croquettes in deep-fat fryer for approximately 3 minutes or until brown. Drain. Serve with turkey gravy.

Makes about 8 and is a delicious way to use leftovers. 2 cups chopped chicken or turkey. Sprinkle meat with 1 tablespoon lemon juice, season with salt and pepper. Mix the following sauce: 2 tbsp. flour
Melt butter. Stir in flour. Add: 1/4 tsp. celery salt 1/4 tsp. paprika 1/2 c. milk 1/2 c. chicken broth
Cook until thick and combine with meat. Make into 8 patties, coat with flour and dip into egg mixture (2 eggs, beaten with 2 tablespoons water) then into fine cracker crumbs. Chill until firm. Fry in oil until golden brown and heated through.
TURKEY CROQUETTES
2 1/2 c. ground cooked turkey
2 tbsp. melted butter
2 tbsp. chopped parsley
1 tbsp. minced onion
1/8 tsp. sage
Salt
1 egg
1 tbsp. water
1/4 c. flour
1/2 c. dried bread crumbs
Salad oil
In a medium bowl, blend first 5 ingredients. Add salt to taste. Cover and chill several hours. 30 minutes before serving, shape mixture into 8 cones. In shallow dish, beat egg with water. Place flour and bread crumbs on separate sheets of wax paper. Coat each croquette first in flour, then in egg, then in crumbs. In 4 quart sauce pan, over medium heat, heat oil; fry croquettes, turning until golden brown. Drain on paper towels. Serves 4.
