I use a turkey rub/combo seasoning by McCormicks
1. thaw or use fresh turkey
2. wash, then pat dry
3. coat with butter (not margarine)
4. sprinkle with seasonings
5. i put onion, lemons or oranges in cavity - helps with moisture/flavor
6. following cooking instructions
7. I baste with the turkey juices every hour
8. you may need to cover the top of the turkey near the end to keep from burning the skin
9. and most importantly let the turkey sit for at least 15 minutes after it is done so the juices can settle.
Also - you may want to invest in a good carving knife..it is a shame to cook a beautiful bird then ruin it with a bad knife.

well martha stewert took choped cerery onions garlic to a 2inch sizes and put it in side the turkey it makes the turkey have flavor and she took butter and rubbed on the out side and she made a mixer of melted butter cooking oil and she took cheese cloth and tipped the cheese cloth in the mixer and put it on the turkey you do this every 2 to 4 hours . Place turkey in a bucket (5 gallon). fill with apple juice until the turkey is covered. Add about 3/4 of a cup course ground salt. If you don't have a refrigerator big enough to keep it cool fill the rest of the bucket with ice and put it in a cool dark place. check ice every few hours if you live where it is warm. I do mine for 48 hours. I then smoke them in my smoker. If you are going to cook it in the oven slice up some apples,oranges,lemons and place inside the turkey. brush the outside of the turkey with olive oil. when cooking use a digital probe thermometer. cook until 160 degrees. Remove from oven and let rest about 15-20 minutes.

Herb Roasted Holiday Turkey
1 Reynolds Oven Bag, Turkey Size
1 tablespoon flour
2 stalks celery, sliced
1 medium onion, sliced
12 to 24 pound turkey, thawed
Vegetable oil
1 tablespoon dried sage
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon seasoned salt
PREHEAT oven to 350掳F.
SHAKE flour in Reynolds Oven Bag; place in large roasting pan at least 2 inches deep. Spray inside of bag with nonstick spray to reduce sticking, if desired.
ADD vegetables to oven bag. Remove neck and giblets from turkey. Rinse turkey; pat dry. Brush turkey with oil. Combine sage, thyme, rosemary and seasoned salt. Sprinkle and rub herb mixture over turkey, turning to coat evenly.
PLACE turkey in oven bag on top of vegetables.
CLOSE oven bag with nylon tie; cut six 1/2-inch slits in top. Insert meat thermometer through slit in bag into thickest part of inner thigh. Tuck ends of bag in pan.
BAKE 2 to 2 1/2 hours for a 12 to 16 lb. turkey, 2 1/2 to 3 hours for a 16 to 20 lb. turkey, and 3 to 3 1/2 hours for a 20 to 24 lb. turkey, or until meat thermometer reads 180掳F. For easy slicing, let stand in oven bag 15 minutes before opening.
REYNOLDS KITCHENS TIPS:
- For stuffed turkey: Lightly stuff turkey with your favorite stuffing recipe before brushing with oil. Add 1/2 hour to bake time.
- If turkey sticks to oven bag, gently loosen bag from turkey before opening bag.
- Estimate 1 pound per person for generous servings with leftovers.

Melt some butter mix it with honey and garlic powder, bursh all over your bird and inside too! Put in a bag breast side down and cook according to the directions on the turkey! When there's about 30 minutes left trun in breast side up, that will brown and crisp the top!
