What is your favorite recipe made from turkey leftovers (Thanksgiving or otherwise)... and why?

I like to make Turkey Salad,it is great when you don't feel like cooking,just get some bread,put it on and enjoy!!! YUMMY!!!What is your favorite recipe made from turkey leftovers (Thanksgiving or otherwise)... and why?
