Anyone have a good recipe for turkey cutlets?

We have started to eat helthier and I bought some the other day to try but I have no idea ho w to cook them!Anyone have a good recipe for turkey cutlets?
Turkey cutlets in Dijon cream





This is a last 鈥?minute dish, so have at the ready every ingredients and implement you will need





Ingredients


2 pounds turkey cutlets, cut 1/4 inch thick and pounded thin as for scaloppini


coarse salt


white pepper


1/2 cup unsifted flour


8 tablespoons unsalted butter


1/4 cup Dijon mustard


6 tablespoons dry white wine


2 cups heavy cream


freshly chopped parsley





Method


Cut turkey into pieces about 2 inches by 4 inches. Sprinkle both sides of each with salt and pepper, then dredge in flour. Heat 4 tablespoons butter in a large heavy skillet over moderately high heat until a bread cube will sizzle; lightly brown cutlets, a few at a time, 1 鈥?2 minutes per side, adding butter as needed. Drain on paper toweling and keep warm.





Combine mustard and wine, mix into skillet drippings, and simmer, uncovered, 1 鈥?2 minutes until reduced to about 1/4 cup. Whisk in cream and boil slowly, stirring often, until thickened slightly. Return turkey to skillet and heat 1 鈥?2 minutes, stirring occasionally over low heat. Sprinkle with parsley and serveAnyone have a good recipe for turkey cutlets?
Cinnamon Orange Turkey Scallopini


INGREDIENTS (Nutrition)





* 4 (6 ounce) turkey cutlets


* 1/2 teaspoon ground cinnamon


* salt and freshly ground black pepper to taste


* 2 cloves garlic, minced


* 1 tablespoon canola oil


* 1/2 cup fresh orange juice


* 1 tablespoon fresh lemon juice





DIRECTIONS





1. Combine the cinnamon, and garlic with a little salt and pepper; rub over both sides of the turkey cutlets.


2. Heat oil in a large skillet over medium-high heat. Add the seasoned cutlets, and fry for 2 to 3 minutes on each side, until nicely browned on the outside, but not fully cooked. Remove from the pan and set aside; keep warm.


3. Pour the orange juice and lemon juice into the pan, stirring in any bits of food that are stuck to the pan. Bring to a boil, and return the turkey to the pan. Reduce heat to medium, and cook until liquid has reduced by half, 10 to 15 minutes. Serve cutlets with sauce spooned over.
Dang it, was going to suggest making schnitzel out of them but then I noticed the healthier part.....Still, I suppose you could bake them instead of frying them? I pound them flat with a mallet then put some seasoned salt on both sides. Dip them in eggs then bread crumbs.


Also you could marinade them in Garlic teriyaki sauce overnight, or a few hours and grill them. My kids like that.

sear seasoned cutlets in a small amount of oil


not cooking through just browning out side


place in a shallow baking dish and top with your favorite tomato based pasta sauce.


top each cutlet with a small amount of Parmesan cheese and bake in a 350f oven for about 20 min or until cooked through serve with pasta and a green salad.
