I like roasting the turkey first then putting it in to the pot pie. You can get a small turkey, roast it, cut it up, throw the sucker in to the pan with the rest of the veggies. I use pills-berry roll dough to make the crust. I take it out of the can, mush it together in to a ball, and i roll it out and cover the pan with it. make sure you make some holes because it might want to rise to much because of the steam.
The best I have had is to make a pie crust and line your pan with it. Bake the crust so is done but not brown. Mix 2 c. chopped turkey, One can peas, one can chopped carrots and small onion. Make your turkey gravy, I use 2 packets of gravy mix. Combine everything together, and pour into pie crust. Make pie crust for the top, and bake at 325* for about 35 minutes.
I just buy the pre-made crusts, fill it w/ my favorite veges, and cooked turkey or chicken, add cream of chicken or mushroom soup, cover w/ a second crust to top it, cut some vent slits into top crust, and bake @ 325 degrees until golden brown.
