Does anyone have a good recipe for turkey meatloaf?

I happen to have 1 1/4 pounds of ground turkey in the house. :D I also have some oats, eggs, onion, and most spices but no breadcrumbs. any good recipes?Does anyone have a good recipe for turkey meatloaf?
use the egg meat chopped onion and a packet of stuffing mix together with some tomato puree - mix it well and cook as normal it's deliciousDoes anyone have a good recipe for turkey meatloaf?
With oats, you don't need breadcrumbs. Sorry, my recipe is purely in my head. It usually includes dried cranberries, diced apple chuncks, etc. Just be sure you either put parchment paper in the pan or spray with one of those ';Pam'; or similar lubricant to keep it from sticking.

* 1 pound mild Italian turkey sausage, casings removed


* 1 pound ground turkey


* 2 eggs, beaten


* 1 1/2 cups rolled oats


* 1/2 cup chopped onion


* 1/2 cup milk


* 1 tablespoon Worcestershire sauce


* 1 teaspoon Italian-style seasoning


* 1/2 teaspoon garlic powder


* 1/2 teaspoon salt


* 2 cups spaghetti sauce


* 5 dashes hot pepper sauce


* 1 tablespoon Worcestershire sauce


* 1/2 teaspoon liquid smoke flavoring





1. Preheat oven to 350 degrees F (175 degrees C).


2. In a large bowl, combine the ground turkey, sausage, eggs, oats, onion and milk. Season with 1 tablespoon Worcestershire sauce, Italian seasoning, garlic powder and salt. Mix well and form into a loaf. Place into a 9x13 inch baking dish.


3. In a separate small bowl, mix together the spaghetti sauce, hot sauce, 1 tablespoon Worcestershire sauce and liquid smoke. Smooth over the entire meatloaf.


4. Bake in preheated oven for 50 to 60 minutes.

* 1 onion, coarsely chopped


* 3/4 cup regular rolled oats


* 1/2 cup fresh green beans, chopped


* 1/2 cup fresh cranberries, chopped

* 1 teaspoon bay leaf, crumbled


* salt and ground black pepper to taste


* 1/4 pound thinly sliced pancetta

* 1 clove garlic, minced

* 1 teaspoon freshly grated nutmeg

DIRECTIONS





1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x9 inch square baking dish.


2. Mix the ground turkey with the eggs, onion, rolled oats, green beans, cranberries, rosemary, and bay leaf in a large bowl. Use your hands to thoroughly blend the ingredients. Season to taste with salt and pepper. Spread the ground turkey mixture over the bottom of the prepared dish. Top with a layer of pancetta.


3. Bake the meatloaf in preheated oven for 45 minutes to 1 hour. Check for doneness when juices run clear, and an internal thermometer inserted into the meatloaf reaches 160 degrees F (70 degrees C).


4. Meanwhile, to make the gravy, melt the butter in a pan over medium heat. Stir in the flour, and cook for 1 to 2 minutes until the mixture becomes paste-like and light brown. Stir in the garlic, cinnamon, and nutmeg. Gradually whisk in the milk and chicken broth, bringing the mixture to a boil. Lower the heat to medium, and continue cooking and whisking until desired thickness is reached. Season to taste with salt and pepper. Serve spooned over sliced meatloaf.

* 1 cup cubed bread


* 1 egg, beaten


* 2 tablespoons chopped onion


* 1 tablespoon chopped green pepper

* 1 dash celery seed

1. In a bowl, combine the water, teriyaki sauce and bread cubes; let stand for 5 minutes. Add the egg, onion, green pepper, mozzarella and cheddar cheeses, garlic powder and celery seed. Crumble turkey over mixture and mix well.


2. Pat into an ungreased 5-3/4-in. x 3-in. x 2-in. loaf pan. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees F for 1 hour or until a meat thermometer reads 165 degrees F drain.

* 1 tablespoon Worcestershire sauce


* 1/2 teaspoon Dijon mustard


* 1/2 cup oat bran


* 1/2 cup chopped green pepper


* 1/4 cup finely chopped onion


* 2 tablespoons chopped ripe olives


* 1 garlic clove, minced


* 1/4 teaspoon celery salt


* 1/4 teaspoon dried marjoram


* 1/4 teaspoon rubbed sage


* 1/4 teaspoon pepper


* 1 pound ground turkey





DIRECTIONS





1. In a large bowl, combine the egg white, ketchup, Worcestershire sauce and mustard. Stir in the oat bran, green pepper, onion, olives, garlic, celery salt, marjoram, sage and pepper. Crumble turkey over mixture and mix well.


2. Pat into a loaf in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray. Bake, uncovered, at 375 degrees F for 55-65 minutes or until a meat thermometer reads 165 degrees F.

I always use crushed up saltine crackers if I don't have oats for my meatloaf.
Oats are a good substitute but you could take some bread and toast it, then let it cool a bit and break it up into small pieces. Add a little tomato or catsup to the meat mix (no more than 1/4 cup) and cover the loaf on top, too. Soy sauce is also good in it.
