HERB TURKEY RUB:
1/4 cup white wine worcestershire sauce
1/4 cup olive oil
4 teaspoons fresh rosemary, chopped
4 teaspoons fresh thyme, chopped
4 teaspoons onion, minced
4 teaspoons garlic, minced
2 teaspoons salt
Combine all ingredients and mix well, should have the consistence of a thick paste.
Rub herb mix all over turkey (underneath and on top.) Refreferate until ready to bake.
NOTE: Whole poultry should be rubbed down the night before or at least several hours before hand. This allows the seasonings to mingle with the natural juices of the meat and sink in.

I get that same effect when I inject the meat with spices. My fave is to mix italian dressing (strain out the chunks of garlic 'n' stuff), with honey until it is nicely balanced between sweet and sour, and then add hot sauce until it is hotter that you like (turkey meat is pretty bland, it can stand the heat). Inject that into all of the major muscles in the turkey and let it sit (covered) in the fridge overnight. Cook, eat and enjoy!
I just shove butter up under the skin before baking and use Pepper but don't salt until the turkey is done. Salt will dry it out and cause tough meat.
Baste often.
I can't think of a spice that they may have used for turkey, unless it was a simple poultry spice. Which is bought by the same name. Poultry Spice....what is in that? I'm not sure.
Celery Salt? Onion? don't know, sorry.
