Here's my absolute favorite for turkey burgers (makes 4):

Ingredients

4 turkey burgers

6 large mushrooms, sliced

1/2 shallot minced fine

1 tbsp Butter, divided

1 tbsp Olive Oil

1 tbsp white wine worcheshire sauce

4 slices good swiss cheese

1 tbsp mayonaisse

1 tbsp Dijon mustard

Alflafa sprouts

4 Kaiser rolls

Prep:

Saute mushrooms with shallot in some butter. Set aside.

In a skillet, melt remaining butter and add olive oil. This should be on medium heat. When the butter is melted, add the burgers. Brown on both sides, then add worcestershire, cover and reduce heat.

In the meantime, mix the mayo and mustard. Cut the Kaiser rolls in half, and spread with the mayo mustard mixture. Put each roll on a plate.

Remove the cover on the burgers, and put the slices of cheese on. Replace the cover and cook until the cheese has melted.

Carefully place the burgers on the buns, top with sauted mushrooms and alphalfa sprouts.

Serve and enjoy!
I like to serve these on bruschetta or garlic bread with some baked fries that have been seasoned with garlic and parmesan. I also add some garlic to the burgers, and sometimes some basil to the stuffing.

Stuffed Turkey Burgers

1 1/4 pounds lean ground turkey breast

1/2 cup chopped roasted red peppers

1/2 cup shredded part-skim mozzarella cheese

1/4 teaspoons salt

Freshly ground black pepper

Divide turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Sprinkle 4 of the patties with 2 tablespoons red peppers and cheese, and top with remaining patties, working the turkey around the edges to seal burgers closed. Season with salt and a few grinds of pepper. Grill or broil until cooked through, about 5 minutes per side.
1 1/2 ground turkey

1 package Lipton onion soup mix

2 slices bread, soaked in a little milk, squeeze excess milk out and tear into small pieces

1 tbsp. garlic powder

1/4 cup fresh cut italian parsley

salt and pepper to taste.

Mix all ingredients together and make a nice burger. Put a little olive oil in a non stick skillet and fry on both sides. Turn heat to simmer and cover and cook for approx. 5 minutes covered or until you are sure burgers are cooked thoroughly. They are awesome.
