Can you suggest a great turkey chili slow cooker recipe which uses dried beans instead of canned ones?

You should soak you beans for a long time (at least overnight) to make sure they cook well. I would use some red kidney beans, maybe a few (just a few now, for color and texture) black beans and maybe some pinto beans.. but mostley kidney beans. Then use them in any recipe ,as you like.


Chili is a hard one, everybody likes it differently, but to me, it IS NOT CHILI WITHOUT BEANS!!!! I like a tomoato base, tomato sauce (I use home canned) is good , stewed tomatoes are good,maybe even some tomato paste, garlic is a must and lots of onion.


Beings you are going to slow cook it, you don't have to worry about softening your onions or anything , you have plenty of time and this will take place in your slow cooker.


I like to start a chili in the evening and let it cook all night and most of the day the next day. Make sure you use either a comercial mix like Mcormicks Chili mix (or another type of your prefference) or use some cumin and chili powder, add some water for the beans to soak up and cook in and it is hard to mess up. Just keep an eye on it so it don't go 'dry' . Moisture is a good thing while everything is cooking.


Be careful with salt, while everything is diluted, it may seem like you need salt, but as things cook down and thicken, the taste will concentrate so it easy to ';over salt'; chili. Wait till near the end to adjust your flavors by adding more of what you need.


Of course you ';can'; cook your beans first, but I see no need to with slow cooking. It is all up to you.


Also, with turkey, I would wait until close to the end ( 1 or 2 hours) before adding the meat otherwise it will over cook and fall apart and become stringy.

If you like a chili full of robust flavor... You have got to try this recipe! Everyone who has tried it says it is the best chili they have ever had %26amp; it's made with turkey! You can adjust the spice from Mild to HOT-HOT! If you don't want to use dried beans, please feel free to used canned.

SERVES 12





4 lbs ground turkey


1 lb bacon (cooked %26amp; chunked)


4 1/2 cups dried beans (black beans, pinto beans, or great northern beans all work very well)


2 (16 ounce) cans tomatoes (either diced or crushed are fine)


12 ounces tomato paste


2 onions, finely diced (preferably vidalia)


2 green bell peppers, diced


1 red bell pepper, diced


1 yellow bell pepper, diced


2 (10 ounce) cans condensed beef broth (or chicken broth)


6 ounces beer (1/2 can)


2 fresh tomatoes


3 garlic cloves


1 tablespoon ground cumin


1 tablespoon oregano


1 1/2 tablespoons paprika


2-4 tablespoons chili powder (to taste)


2-4 tablespoons cayenne pepper (to taste)


2 jalapeno peppers (You can omit them completely or substitute hotter peppers if you want more fire)


1 (8 ounce) package shredded cheddar cheese





Mix %26amp; soak beans overnight per package directions.


Process the fresh tomatoes, garlic, cumin, oregano, paprika, chili powder, cayenne pepper %26amp; jalapeno (hot) peppers in the food processor; place in the refrigerator overnight.


Note: The 2 tablespoons each of hot spices makes a very mild chili- while the 4 tablespoons w/added hot peppers turns up the heat-- for those who like it HOT!


Take out four or five cups of the soaked beans and place in crockpot (cut it to 3 cups if you did the fast soak- they will still expand while cooking).


Freeze the rest for later use.


If you are using canned beans you'll lose some of the flavor-- but it's still good.


Fry the bacon until crispy and place in crockpot.


Brown the ground turkey in some of the bacon drippings and place in crockpot.


Add the crushed tomatoes, tomatoe paste, onions, bell peppers, broth, beer %26amp; tomato spice puree.


Stir to mix and let cook for 10-12 hours on low.


(You can also cook for 5-6 hours on high, but the beans will not soak up as much of the flavor).


Serve topped w/the shredded cheddar cheese.

You have to soak dried beans overnight and then cook them before you can use them in chili, canned beans are much easier.
