Good recipes for left over turkey?

Go on, what can I do with it on Boxing Day? Keep it clean, please!!Good recipes for left over turkey?
TORTILLA TURKEY STACKS


2 7-inch flour tortillas


3/4 cup chopped cooked turkey or chicken


1 tablespoon bottled fat-free Thousand Island salad dressing


1 TB bottled chunky salsa


1-1/2 ts thinly sliced green onion


1/2 C canned vegetarian refried beans


1-1/2 C shredded lettuce


1/2 of a medium tomato, chopped


1/4 C shredded reduced-fat Monterey Jack cheese or reduced-fat Colby and Monterey Jack cheese





1. Place tortillas in a single layer on a baking sheet. Bake in a 350 degree F oven for 10 to 12 minutes or until crisp and light brown. (If tortillas puff during baking, pierce with a fork to allow steam to escape.)





2. Meanwhile, in a medium bowl combine turkey, salad dressing, salsa, and green onion. Set aside.





3. To assemble, spread about 1/4 cup of the refried beans over each tortilla. Top with turkey mixture, lettuce, tomato, and cheese. Makes 2 servings.


*I think this would be good with some sour cream %26amp; I used black olives this year. Was a hit!!





TURKEY 'N STUFFING BAKE


3 C prepared stuffing


2 3/4 oz fried onions





1 can cream of celery


3/4 C milk


1 1/2 C cooked tukey


'10 oz peas, thawed





Combine stuffing %26amp; half can onions. Spoon mixture into a shallow 9'; baking dish. Press mixture to form a shell along bottom %26amp; sides of pan. Combine cream of soup, milk, turkey %26amp; peas, pour into stuffing shell. Bake covered 350 F for 30 minutes. Top with remaining onions. Bake uncovered 5 minutes longer.

1 1/2 C cooked tukey





Combine stuffing %26amp; half can onions. Spoon mixture into a shallow 9'; baking dish. Press mixture to form a shell along bottom %26amp; sides of pan. Combine leftover casserole %26amp; turkey, pour into stuffing shell. Bake covered 350 F for 30 minutes. Top with remaining onions. Bake uncovered 5 minutes longer.





THANKSGIVING WRAP


Slice leftover turkey. Spread tortilla with leftover canned cranberry sauce and a layer of sliced turkey, then wrap it up.

TURKEY BURRITO OR TURKEY SOUP


Put into crock pot:





3 C each turkey, cooked, prepared stuffing, mashed potatoes, gravy %26amp; broth.


1 onion, cut as you please.

Smoked Turkey Tortilla Wraps











INGREDIENTS (Nutrition)


10 whole wheat flour tortillas


10 slices smoked turkey, cut into thin strips


1 avocado - peeled, pitted and sliced


1/2 cup sour cream, for topping


1/2 cup Cheddar cheese

DIRECTIONS


Heat flour tortillas in a large skillet over medium heat until slightly browned. Divide turkey strips, avocado, sour cream, and cheese among the warmed tortillas. Fold in half and serve.








It looks good and easy to do!
Jamie Oliver did a couple of brilliant recipes for left over Turkey on his Channel 4 show 'Jamie cooks christmas'


One was the Asian turkey salad...and the other was a sweet leek and turkey pie....which looks delish....I've bought in the ingredients for this already...and I haven't even got my Turkey yet!!
I like turkey a la king. Its really, easy and quick.





4 oz. can of mushrooms


1 can peas or 1 1/2 c. frozen peas


1/2 c. butter


1/2 c. flour


2 c. chicken broth


2 c. milk


1 tsp. salt


1/4 tsp. pepper


2 to 3 c. cooked chicken or turkey


1/4 c. chopped green onion (optional)





Saute mushrooms and onion in butter. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat and slowly stir in broth and milk. Bring to boil over low heat, stirring constantly. Boil 1 minute; add chicken or turkey and peas. Continue cooking until meat is heated through. Serve hot over biscuits, rice, noodles or toast points. Serves 6 to 8.





I usually serve mine over rice. Enjoy!
Chop it up with a hard boiled egg and some grilled onions. Salt and pepper to taste. Fold some pie pastry over it to make half-moon shapes about 3 to 5 inches long, depending on whether you want to use them as appetizers or full portions. Throw them in a 350 oven until they look golden brown (with an egg wash on top if you want them shiny) and, voila, you've got empanadas or pasties.
I always make turkey salad. It's simple, easy, and really good for you.

Turkey enchiladas!!! Delicious! The same way you make regular beef or cheese enchiladas but you use turkey!!!
Mom always heated up the leftover gravy, added some turkey and a can of drained peas. We ate this over toast or leftover mashed potatoes. Mmmm comfort food
