Turkey Leftovers: Anyone Have an Awesome Recipe?

I have a bunch of shredded turkey breast left from Thanksgiving. Any suggestions on what to make with it? I was thinking of either a stew or tacos, but other ideas are very welcome! Thank you!Turkey Leftovers: Anyone Have an Awesome Recipe?
Baked Turkey Enchiladas





(Serves 6)





I N G R E D I E N T S





2 cups cooked turkey, cut into 1/2 inch cubes


2 cans (10 oz each) enchilada sauce


1 can (4 oz) choppped green chilies


1 tsp dried onion flakes


1 tsp dried cilantro


12 corn tortillas (6 inch diameter)


Non-stick vegetable cooking spray


2 Tbs onion, chopped


1 cup tomato, chopped


1/4 cup chopped ripe olives


1 cup cheddar cheese, shredded





D I R E C T I O N S





In medium bowl combine turkey, 1/2 cup enchilada sauce, chilies, onion flakes and cilantro. Spoon 2 heaping tablespoons turkey mixture down center of each tortilla. Roll tortillas jelly-roll style to encase meat. Spray 9 x 12 baking dish with cooking spray. Place tortillas, seam-side down, in baking dish. Top tortillas with remaining enchilada sauce, onions, tomato, olives, and cheese. Bake in preheated 350 degree oven 25 to 30 minutes or until mixture is hot and bubbly.

Cheesy Turkey Lasagna (2nd Prize at 2002 Utah State Fair)





(Serves 8)





I N G R E D I E N T S





1 package (10 oz) frozen chopped spinach, thawed, drained, and patted dry


3 cups cooked turkey white meat, chopped


4 cups grated Mozzarella cheese


2 cups grated Parmesan cheese


1 cup Ricotta cheese


1 cup chopped onions


1/2 tsp dried Rosemary


1 tsp dried marjoram


1 tsp garlic powder


1/2 tsp oregano


1/2 tsp black pepper


1/4 tsp salt


1 Tbs lemon juice


1 can (10 oz) cream of chicken soup


1/2 cup sour cream


1/2 cup milk


9 lasagna noodles, cooked according to package directions





D I R E C T I O N S





Preheat oven to 350掳F. Saute onions in small frypan until lightly browned. In a large bowl mix together all ingredients except noodles, and Mozzarella and Parmesan cheeses. In another bowl mix the cheeses together. Place 3 of the noodles on the bottom of a 9'; x 13'; baking dish. Spread 1/3 of the turkey mixture over the top, followed by 1/3 of the cheese mixture. Repeat the process two more times, ending with cheese on the top. Bake on center rack in the oven for 25-35 minutes until the lasagna is thick and bubbly.

Marinated Turkey Tacos (1st Prize at 2002 Utah State Fair)





(Serves 6)





I N G R E D I E N T S





Salsa:


4 Roma tomatoes, seeded and diced


1 table tomato, seeded and diced


1 medium onion, diced


1 red jalapeno pepper, chopped


1 medium green bell pepper, chopped


2 yellow chili peppers, chopped


2 Tbs mild green Tabasco庐 sauce


juice of 2 tomatoes


salt and pepper to taste











3 cups cooked Norbest庐 turkey, cut into 1-inch cubes


1 cup raspberry vinegar


3 Tbs mild green Tabasco庐 sauce


6 hard taco shells


3/4 cup sliced black olives


2 cups shredded green leaf lettuce


1 cup shredded smoked Mozzarella cheese





D I R E C T I O N S





Combine turkey with salsa ingredients and mix well. Pour vinegar over mixture, cover and marinate overnight. Drain salsa mixture before assembling tacos. Add 3 more Tbs mild green Tabasco庐 sauce and mix well. To each taco shell add 3 Tbs of turkey mixture; add sliced olives, lettuce, and cheese to taste.Turkey Leftovers: Anyone Have an Awesome Recipe?
';Chop Suey'; - 6 servings





2 tbsp. soy sauce


2 tbsp. cornstarch


1 3/4 cups chicken broth


3 tbsp. salad oil


2 cups shredded cabbage or Chinese cabbage


1 large onion; diced


2 ribs celery; diagonally sliced


2 cups sliced mushrooms


2 cups cooked chicken or turkey; cut into julienne strips


2 cups fresh or canned bean sprouts; drained


1/2 cup sliced water chestnuts


Hot cooked rice or chow mein noodles





1) In small bowl, blend soy sauce with cornstarch until smooth. Stir in chicken broth; set aside.


2) In 10'; skillet or wok over high heat, in hot oil, cook cabbage, onion, celery and mushrooms, stirring quickly and frequently (stir-frying) about 3 minutes or until tender-crisp.


3) With slotted spoon, remove vegetables to bowl, leaving oil in skillet. To oil remaining in skillet; add chicken strips; stir-fry 3 minutes or until lightly browned. Add bean sprouts and water chestnuts; stir-fry 1 minute. Add cooked vegetables; stir-fry 1 minute.


4) Stir soy sauce mixture to mix; gradually stir into hot mixture in skillet and cook, stirring constantly until thickened. Serve immediately over rice or chow mein noodles. Serve with additional soy sauce. Yields 5 cups.
Make a turkey pot pie with homemade crust, use the leftover gravy...my kids love this more than thanksgiving dinner!
use it in stir-fry, re-fry it with sliced mushroom and teriyaki and serve as turkey sandwich or eat with steam rice and mixed vegetables, in taco, fajitas.

For a quick snack, I would suggest getting rolls (perhaps leftover rolls) and make a turkey sandwich with mayo and mustard. It's really good and easy to make.
Turkey and Broccoli Amandine





4 ounces (about 2 cups) medium noodles


1 package (10 ounces) frozen broccoli


2 tablespoons butter or margarine


2 tablespoons all-purpose flour


1 cup each of undiluted evaporated milk and turkey or chicken broth


1 cup diced cheddar cheese


1 teaspoon Worcestershire


1/4 teaspoon pepper


2 cups diced cooked turkey


salt


1/4 cup toasted slivered blanched almonds





Cook and drain noodles; put in shallow baking dish. Cut broccili into 1-inch pieces and reserve blossoms. Arrage stems on noodles. Make a sauce with butter, flour, and liquids. Add cheese, worcestershire sauce, and pepper; stir until cheese is melted. Add turkey and salt to taste. Pour over ingredients in dish. Arrage broccoli blossoms on top, and sprinkle with almonds. Bake in preheated moderate oven (350 F) for about 30 minutes. Good with tomato juice, peas, and fudge cake. Makes 4 servings.
here's something quick and easy:





';turkey philly cheese sandwiches';





2 tbsp (or just enough) of butter


1/4 tsp black pepper


1 c thinly sliced onions


1c thinly sliced green bell peppers


3/4 lb thinly sliced turkey


4 (2 oz) sandwich rolls (such as hoagies)


4 (1 oz) each mozzarella or provolone cheese





1. preheat oven to 375 degrees





2. In a large non stick skillet, melt butter over medium high heat. Add onion and bell pepper, saute five minutes or until veggies are tender. Stir in black pepper.





3. Divide veggie mixture and turkey evenly among bottom half of rolls, top each serving with a slice of cheese. Cover with top halves of rolls.





4. Place sandwiches on a baking sheet. Bake for five minutes or until cheese melts.





5. ENJOY!!!!

Fiesta Turkey Soup With Green Chile Biscuits:





1 medium onion, diced


1 teaspoon vegetable oil


1 garlic clove, minced


3 cups chopped cooked turkey or chicken


1 (15-ounce) can chili beans


3 1/2 cups chicken or turkey broth


1 (11-ounce) can whole kernel corn with red and green peppers, drained


1 (10-ounce) can diced tomatoes and green chiles


1/2 teaspoon chili powder


1/2 teaspoon ground cumin


1/8 teaspoon salt


1/8 teaspoon pepper


Toppings: sour cream, shredded Mexican four-cheese blend


Green Chile Biscuits





Saut茅 onion in hot oil in a large Dutch oven over medium heat 7 minutes or until tender. Add garlic, and saut茅 1 minute. Stir in turkey and next 8 ingredients. Bring to a boil, stirring occasionally; reduce heat, and simmer 15 minutes. Serve with desired toppings and Green Chile Biscuits.





Yield: Makes 8 servings
Whats better than a wrap or a sammie? Get some whole grain wraps or soft tortillas, bacon, cheddar cheese (slices), ranch dressing, tomato, onion, and avocado. Slice your veggies up the way you like them and layer with shredded turkey, cheese, Bacon, and ranch dressing. Best sandwich ever! So my mouth says anyway. :)
Australian Basil Turkey wraps


Take the left over turkey and put in a frying pan with Evoo(extra virgin olive oil) for about 5 minutes. Take Evoo,Coreander,Bell pepper,Cilantro,yellow tomatos and a small amount of African safron and toss together.That will be the Tomato salad. Take the turkey and mix it with some diced australian basil and diced roma tomatoes, Then put the turkey mixture in a blue corn tortilla. Put the wrap over the tomato salad and the garnish with french Post'er(expensive herb)
Creamed Turkey Over Biscuits


Put cut up left over turkey in a large pot. Add enough water to cover turkey. Put about 1 chicken bullion cube per cup of water. Cook until chicken broth cooks into turkey, about 30 minutes. Make a thickener with corn starch and milk. Slowly stir into turkey and broth til thickened. Pour over biscuits, mashed potatoes (leftover maybe) or toast. It tastes good and can go a long way.
