my choice would be a hearty oat nut or whole wheat bread, with muenster or provolone cheese, spinach, onions, and a little bit of garlic mayo. it'd be great as a panini, cooked in a pan like a grilled cheese, or toasted.


i'm also a fan of turkey clubs - on thick white toast, with bacon, lettuce, tomato, white cheddar cheese, and a little mayo. mmm!What should I add to my turkey sandwich recipe?
Wheat bread is always good, or a hoagie roll. Definitely add lettuce and tomato. And just a little splash of italian dressing adds lots of seasoning and spice....kind of like the taste of oil and vinegar on a sandwich from Subway. But don't use too much...it'll make the bread soggy.
If i were you, i would use french stick, mayo, hot mustard, double onions, and hot or bell peppers. I like things very spicy. I don't know about you, though.
I like sliced cucumbers, mayo, salt, pepper on sourdough.

I like making chili with ground turkey. I use 1 lb of ground turkey, fry it until is is no longer pink, add one can of pinto beans, 1 chopped up bell pepper, 1 chopped up onion, 3 cloves of garlic-smashed, one tablespoon of chili powder, 1 teaspoon of cumin, two ounces of dark chocolate chopped fine, and two cups of chicken broth. Meatballs





If you like, add beef bullion cubes to the milk and skip the liquid beef broth. Delicious with cooked pasta or as a meatball sandwich.








1 LB ground turkey


陆 cup unseasoned dry bread crumbs


陆 cup Romano or Parmesan cheese, finely grated


录 cup whole milk


录 cup low-sodium beef broth


录 cup chopped fresh parsley


1 egg, beaten


1 teaspoon dried oregano


2 teaspoons garlic, minced


2 teaspoons kosher salt


2 teaspoons ground black pepper


1 teaspoon dried basil


陆 teaspoon dried pepper flakes


Pinch nutmeg





Yield: about 16 golf-ball sized meatballs





Combine all ingredients and stir thoroughly with a fork.


Bake at 425F for 25 minutes or fry as desired.





To freeze: place raw meatballs on cookie sheet, 1 inch apart and freeze one hour. Pop the frozen meatballs off the tray and place in a zipper-type baggie. Roll up and return to freezer. To use, bake from frozen at 425F for 30 minutes.

I make a bread stuffing with celery, onions, poultry seasoning and chicken stock and a whole loaf of white bread that is at least a day old and stale. for my turkey i melt 2 sticks of butter, 2 tbsp each or parsley, rosemary, thyme, and salt and pepper and i add 1 tbsp lemon juice to the butter and mix all this together and baste the entire cleaned bird, and place him in a roasting pan and fill the bottom of the pan with 1 can of chicken stock and put in a 325 degree oven for 20 minutes per pound and baste him with the butter mixture every hour till he is golden brown and done.. i even loosen the skin around his tuckes and baste the meat with the butter mixture and i might even cook some halved lemons inside the cavity if i have any... he comes out good and clean and fresh tasting...Best Turkey Recipe?
DEEP FRIED TURKEY





1 turkey, 12-15 lbs, thawed


5-6 gallons peanut oil


3 cloves minced garlic


1 stick butter


1/4 lb lean salt pork, finely minced


1 teaspoon soy sauce


1/2 teaspoon paprika


1 large outdoor turkey fryer


1 turkey injector


1 yard of cheesecloth (or a fine mesh strainer)


salt and pepper, to taste





For this recipe, you will need a large outdoor turkey fryer. Find a place to set up the cooking area away from the house, and children or pets. You'll need a heavy-duty turkey lifter to remove the turkey from the hot oil and a long stemmed thermometer, and long-armed hot mitts.


Be sure the turkey is fully thawed before frying.





The night before:





Slice the salt pork into 1/8'; dice or mince well with a cleaver. Combine with 3 minced cloves of garlic and 1 teaspoon peanut oil in a heavy skillet over low heat and leave for 30 minutes, or until the drippings have rendered out from the salt pork. Turn several times. After 30 minutes, add butter, soy sauce and paprika. When butter has melted and become clear, remove pan from heat and strain the mixture with cheesecloth or a fine mesh strainer until no small bits remain. (Alternatively, process until smooth in a blender). This mixture is used to inject the turkey before frying. Inject the turkey about 5 inches apart, having the injector go in different directions several times for each hole made.





If any of the mixture is left when done injecting the turkey, use it to rub the outside of the turkey.





Remove the pop-up timer, then place the turkey in a large food-safe plastic bag in the refrigerator overnight.





Cooking the Turkey





Add peanut oil up to the line on the inside of the turkey fryer (or see your manufacturer's instructions for recommended quantity of oil). The turkey should be submerged with one inch of oil above it while cooking.





Thirty minutes before cooking, remove the turkey from the refrigerator and let sit at room temperature. Bring the oil temperature to 350掳F. Pat the turkey dry with a clean towel.





Put the turkey in the frying basket, breast side (neck end) facing down. With a hot mitt covered hand, stand away from the oil and carefully lower the turkey into the cooker. Allow the oil temperature to lower to 300掳F and continue frying, 4 minutes per pound of turkey.





The turkey will turn a deep brown when done and will be crisp. The temperature in the thickest portion of a thigh should read 175掳F using an instant read thermometer.





Remove the turkey to a cookie sheet; sprinkle both sides with salt and pepper, then allow it to cool, upside down for 20 minutes.





Serve breast side up on a decorative platter.

I have cooked my turkeys a lot of different ways - even turned it upside down one year for half the cooking time! I don't recommend that with a 22 pound turkey! The best way that I love, is brining it over night....I think that it gives it a great flavor and it keeps the meat incredibly tender!...The I stuff the bird with apples and spices...I got this from Alton Brown a couple years back, and it's fool proof! I do mine in a cooler, and then just wipe it out with bleach afterwards, to clean it.





1 (14 to 16 pound) frozen young turkey


For the brine:


1 cup kosher salt


1/2 cup light brown sugar


1 gallon vegetable stock


1 tablespoon black peppercorns


1/2 tablespoon allspice berries


1/2 tablespoon candied ginger


1 gallon iced water


For the aromatics:


1 red apple, sliced


1/2 onion, sliced


1 cinnamon stick


1 cup water


4 sprigs rosemary


6 leaves sage


Canola oil








Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.





Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining.





A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.





Remove bird from brine and rinse inside and out with cold water. Discard brine.





Place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other neutral) oil.





Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving.

    I've never cooked with ground turkey! so i need a recipe.. i'd rather not use it as a substitue for something, because i dont think it'll ';taste right'; because i'm so used to ground beef.

    1 pkg. (16 oz.) frozen LOUIS RICH Pure Ground Turkey, thawed


    1/2 cup old-fashioned or quick-cooking oats


    1 small onion, chopped


    1 egg, lightly beaten

    Cook turkey, onions, garlic and chili powder in large nonstick skillet on medium heat 5 min. or until turkey is no longer pink, stirring occasionally.


    Stir in salsa and rice; simmer 3 min. or until heated through.


    Spoon turkey mixture down centers of tortillas; top with cheese and cilantro. Fold in opposite sides of each tortilla, then roll up burrito-style.

    1-1/2 cups cooked elbow macaroni

    Tator Tot Casserole:





    1 lb. ground turkey


    1 can cream of mushroom soup


    1 can milk


    1 can french style cut green beans

    While the turkey is cooking, combine the soup, milk and green beans in a baking dish, one you would use for a cake would be good. Add the turkey, cover with cheese and top with tator tots. Cover with foil, cook at 350 for 45 minutes, take foil off and cook for another 15. Enjoy!
    I substituted turkey for beef with my father in law, and he never knew the difference. I never had a certain recipe, but the only one I had to mix it with beef was for meatloaf or meatballs. The turkey didn't seem to hold together.





    It has a slightly different texture, and hardly any fat. but it is very similiar in taste.

Can go over noodles or rice. I'm just starting to use ground turkey and fixed a meatloaf the other nite that was so great. I added about a 1/4 lb ground beef so that my husband and kids wouldn't freak and they kept telling me how good it was. I didn't tell them until after we'd eaten what was different. They refuse to eat anything that's diet or healthy. Meatballs are also good made with turkey.I just use the same recipe that I use for ground beef. Put in sage and sausage seasoning and it's great for breakfast.
    GROUND TURKEY %26amp; STUFFING ROLL-UP





    1 - 1 1/2 lbs. ground turkey


    Mushroom and Onion Stove Top Stuffing


    1 can mushroom soup


    1/2 cup water





    Roll turkey out on wax paper in a rectangle shape, 8 x 12 inches. Prepare stuffing.





    Place on top of turkey, an inch from the end. Flatten down.





    Roll the meat and stuffing up like a jelly roll, using the wax paper to keep it together. Pull waxed paper off as you are rolling.





    Pinch the ends to seal it then pat together.





    Place in pan and bake for 1 hour at 350掳F.





    Make the sauce with soup and water. Pour sauce over during the last 15 minutes.





    MEAT LOAF WITH GROUND TURKEY





    1 lb. ground turkey


    1 egg


    1 package of dried onion soup mix


    3/4 c. Italian seasoned bread crumbs


    1 can Campbell's turkey gravy





    Mix ground turkey, egg, onion soup mix and bread crumbs together. Bake at 350 degrees until 3/4 of the way done. Add 1/2 can gravy to the top of meat loaf. Spread on. Finish baking.





    May add green peppers and onions to loaf - optional. Very good, low in fat.





    GROUND TURKEY SHEPHERD PIE





    2 lbs. ground turkey (ground beef also used)


    4 med. potatoes


    2 cans cream corn


    1 med. chopped onion


    1 tbsp. butter





    Saute onion and meat in skillet, drain and place in bottom of 10 inch casserole. Add cream corn to second layer. Cover with mashed potatoes. Add small pats butter topping. Bake at 350 degrees until potatoes form golden crust.

    I use ground turkey in any recipe that you would use ground beef. I love it for burgers, chili, meatloaf, etc. Do not look on it as a substitute for ground beef. Ground turkey can stand on it's own as a wonderful meat and people feel the need to apologize when they serve it. I think it has a better flavor than ground beef.

    To keep it simple use the ground turkey just like you would ground beef and either make turkey burgers or a Turkey meatloaf with the same kind of of seasonings you would use for regular hamburgers or meatloaf.. Hard boil some potato's and chill them and slice up an onion or two and fry the cold potato and onion slices in some extra virgin olive or butter and add salt and black pepper to taste. It's a great tasty combination ! Had this all the time when I was a kid.Does anyone have a simple recipe for ground turkey or potatos?

    In a large pot over medium heat saute the onion, garlic and ground turkey until turkey is browned.


    Add tomatoes, pepper, cumin, chili powder, oregano, cinnamon, brown sugar and cayenne pepper.


    Saute for 5 more minutes.


    Add black beans, corn and chicken broth to the pot.


    Puree cannellini beans in a blender or food processor.


    Add puree to the pot.


    Stir well and simmer for 10 minutes.


    If the turkey mixture seems dry when browning, add a splash of olive oil.


    The spice measurements are approximate.


    If you want more or less heat, adjust the cayenne and the hot sauce.


    If desired, garnish with sour cream, shredded cheese or green onions.
    Make a meat loaf with mashed potatoes and a veggie. Ground turkey can be used just like hamburger. I personally like to make ghoulosh.(Not sure how to spell that one) Anyway......

    2 lg. turkey drumsticks (about 2 1/2 lbs.) cut in thirds


    Water


    1 tsp. salt


    1 bay leaf


    Cooked rice


    1 med. onion, stuck with 3 whole cloves


    2 tbsp. flour


    2 tsp. dried dillweed


    1 c. frozen green peas





    Place turkey in Dutch oven or kettle with 2 cups water, then salt, bay leaf and onion. Cover and simmer 1 to 1 1/2 hours or until meat is very tender and comes off bones easily. Remove turkey from broth. Strain broth and return to Dutch oven. Mix flour and dillweed with small amount cold water until smooth. Stir into broth. Cook and stir until sauce is thickened and smooth. Simmer uncovered while removing skin, bones, and tendons from turkey. Add turkey and peas to sauce. Cover and simmer about 5 minutes or until peas are tender. Serve over hot rice.     if you are using raw turkey it is going to take quite a long time in a toaster oven and it will be very greasy so you may want to wrap it ( or them... can't imagine more than two fitting in a toaster oven ) in some aluminum foil and checking every hour or so to see if you have to drain the excess grease, but if you cook them at 325F I'd say you're looking at at least four hours cooking time

    Turkey sandwich with miracle whip, stuffing, and cranberry sauce. I didn't get turkey this year so I miss that.





    Try just cutting some into cubes, add some veggies and cream of mushroom or celery (basically cream of whatever you like) soup. Let it cook until the veggies are done and pour over noodles. Nice, light and good.

    For the filling:


    1 lb (450 g) boneless turkey thigh meat, diced


    1 oz (25 g) butter


    1 small onion, finely chopped


    6 rashers dry-cure streaky bacon, rind removed, cut into 录 inch (5 mm) strips


    1 oz (25 g) flour


    1 x 284 ml carton chicken stock


    2 oz (50 g) chestnut mushrooms, finely sliced


    2 fl oz (55 ml) cr猫me fra卯che or double cream


    2 level tablespoons finely chopped parsley


    salt and freshly milled black pepper





    For the pastry:


    1 x 375 g pack fresh ready-rolled puff pastry


    2 large egg yolks, beaten


    You will also need a lightly greased baking sheet, 10 x 14 inches (25.5 x 35 cm), and a tape measure.





    First of all, you need to trim the turkey meat into even-sized pieces 鈥?roughly 陆 inch (1 cm) squares. Then melt the butter in a medium-sized saucepan and fry the chopped onion over a medium heat until it has turned pale gold 鈥?about 4 minutes. Then, using a draining spoon, remove it to a plate. Now turn the heat up to high and add the strips of bacon and fry these, tossing them around a few times, for about 4 minutes until they are really crisp. After that, transfer the bacon to join the onion on a plate and start to fry the turkey meat in the bacon fat. You'll need to do this in two batches, and each batch should take about 2 minutes to turn golden on all sides. Now return the onion and bacon and the first batch of turkey to the saucepan. Then, using a wooden spoon, and keeping the heat at medium, sprinkle in the flour and stir it in to soak up all the juices.





    After that, add the chicken stock a little at a time, stirring as you add until all the stock has been incorporated. Then, as it comes to simmer, it will have thickened to a creamy sauce. At this stage add the mushrooms, season well and then let it simmer at the lowest possible heat, uncovered, for 30 minutes, giving it a stir from time to time. Gather up the trimmings and reserve these, then repeat the whole process with the other piece of pastry so that you have four squares in all. Now divide the cold filling between the four pieces of pastry, placing it in the centre.





    Next, brush the edges with the beaten egg yolk, pull up opposite corners to meet in the centre so that what you have is in fact an envelope. Then pinch the seams together carefully, as you don't want them to burst open. Now make a small hole in the centre to allow the steam to escape, then re-roll the pastry trimmings quite thinly and cut them into leaf shapes, making veins in the leaves with the back of a knife. Then arrange the leaves to decorate the parcels. You can make the feuillet茅s up to this stage well in advance and chill them.





    Before cooking, brush the whole lot thickly with a beaten egg yolk. They will need to go on to a greased baking sheet and bake on a high shelf in the oven for 20-25 minutes or until they are a rich golden brown. All this needs is a lightly cooked green vegetable or a salad.

    2 oz (50 g) Cheddar cheese, grated


    6 oz (175 g) self-raising flour


    3 oz (75 g) butter


    陆 level teaspoon mustard powder

    For the filling:


    10-12 oz (275-350 g) cooked turkey, chicken or ham (or a mixture), thinly sliced


    1 lb (450 g) leeks, washed thoroughly and sliced


    3 oz (75 g) cheese, grated


    1陆 oz (40 g) plus 1 teaspoon butter


    15 fl oz (425 ml) breakfast milk or a mixture of milk and leftover cream


    1 oz (25 g) plain flour


    a little freshly grated nutmeg


    1 large egg, beaten


    cayenne pepper


    salt and freshly milled black pepper





    Pre-heat the oven to gas mark 5, 375掳F (190掳C) and pop in a heavy baking sheet to pre-heat.


    You will also need a 10 inch (25 cm) quiche tin.


    First make up the pastry by rubbing the flour into the butter till crumbly, then add the cheese, mustard and seasoning together with just enough cold water to make a dough that leaves the bowl clean. Place the dough in a polythene bag and leave to rest in the refrigerator for 20 minutes or so.





    Meanwhile melt the teaspoon of butter in a frying pan, swirl it round the pan and then, keeping the heat low, add the leeks and let them gently cook for about 6 minutes and exude some of their juice. After that place the leeks in a sieve, strain off any juices into a bowl and set aside. Next roll out the pastry and use it to line the prepared quiche tin. Prick the base of the pastry with a fork, then pre-bake on the centre shelf of the oven for 15 minutes.





    While that's happening put the 1陆 oz (40 g) butter, milk and flour in a saucepan and bring up to the boil, whisking all the time, until you have a smooth thick sauce. Season with salt, pepper and a little nutmeg, then leave the sauce to simmer gently for 5 minutes. Remove the pastry case from the oven and arrange the leeks over the base, followed by the slices of turkey, chicken or ham.





    Now pour the reserved leek juice into the sauce, add three-quarters of the grated cheese and the beaten egg and mix well. Pour the sauce evenly over the contents of the flan and sprinkle the remaining cheese on top together with a dusting of cayenne. Bake the flan at the same temperature as above on the baking sheet for 25-30 minutes or until nicely browned on top.
    Just substitute turkey for anything that you would use chicken for. Tamales, Enchiladas, Soup, Quesadillas, Soft Tacos, Turkey Wrap, Turkey Sloppy Joes, Turkey Sandwitch are all some examples of what you can do w/ leftover turkey.

    Here's my recipe for leftover roasted chicken but should work with turkey too: Shred turkey to medium sized slivers, add seeded tomatoes cut in wedges, add chives or the greenest part of spring onion leaves, olive oil, salt and balsamic vinegare, and you've got a delicious turkey salad.

Boil a few potatoes, Once they are soft put them in a bowl, add the turkey very finley chopped,salt,pepper, garlic finely chopped, parsley finely chopped, one egg beaten and some breadcrumbs. Mix everything together and make them into croquettes if the mixture is sticky add some more breadcrumbs or if it is too dry add another egg. when made into croquettes coat them with breadcrumbs. Now they are ready for frying. Serve them with chips and salad.

    For medical reasons, I'm supposed to avoid red meat so ground beef is a no-no for me. I started substituting ground turkey for anything that most people would use ground beef for a few years ago. In recipes that have enough other flavors in them, I can't even tell the difference from what it tasted like when I used to eat beef.     Ingredients (serves 4)


    2 sheets frozen ready-rolled puff pastry, partially thawed


    1 tablespoon olive oil


    1 brown onion, finely chopped


    500g lean beef mince (any mince could be used)


    1/4 cup oyster sauce


    2 tablespoons reduced-salt soy sauce


    3 cups frozen Asian mixed vegetables


    1 egg, lightly beaten


    Place a baking tray in the oven. Preheat oven and tray to 200掳C. Lightly grease a 17cm (base) pie dish and line with 1 pastry sheet. Trim excess pastry. Using a fork, prick pastry base 6 times (don't pierce all the way through). Place in freezer for 10 minutes.


    Line pastry case with baking paper. Half fill with uncooked rice. Place on hot tray and bake blind for 10 minutes or until pastry edges are light golden. Remove paper and rice. Bake for a further 8 to 10 minutes or until pastry is light golden. Remove from oven. Allow to cool.


    Heat oil in a frying pan over medium heat. Add onion and cook, stirring, for 3 minutes or until soft. Increase heat to high. Add mince. Cook, stirring with a wooden spoon, for 5 minutes or until browned. Add oyster sauce, soy sauce and vegetables. Stir until well combined. Bring to the boil. Reduce heat. Simmer for 5 to 7 minutes or until liquid from vegetables has evaporated. Cool.


    Spoon mixture into pastry case. Brush edges with egg. Place remaining pastry sheet over filling. Trim and seal edges. Brush top with beaten egg. Sprinkle with freshly ground black pepper. Bake for 30 to 35 minutes or until pastry is crisp and golden. Stand for 5 minutes before serving.


    Notes %26amp; tips


    Variation: Rather than using Asian vegetables in your pie, you could add frozen mixed vegetables such as peas, carrots and corn. Or steam some vegetables from your fridge and add these instead.


    Or use some green, red, yellow and orange capsicums.


    Try using chicken mince, mixed with a drained can of corn and some carrot - kids love it.





    You could also make in individual foil pie dishes, for snacks. They freeze well.
    This is very yummy, and good for you too!

    1 (5.25-ounce) can whole green chiles, drained


    Cooking spray


    1 pound ground turkey breast


    1 cup chopped onion


    2 teaspoons chili powder

    2 garlic cloves, minced


    1 (10-ounce) can diced tomatoes and green chiles, undrained


    2 cups frozen whole-kernel corn, thawed


    1 (16-ounce) can fat-free refried beans


    1 1/2 cups (6 ounces) shredded cheddar cheese


    1 cup chopped tomato


    1/2 cup chopped green onions








    Preheat oven to 375掳.





    Cut green chiles in half lengthwise. Arrange chiles in a single layer in an 8-inch square baking dish coated with cooking spray.





    Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey, onion, chili powder, cumin, salt, and garlic; saut茅 5 minutes, stirring to crumble. Add diced tomatoes; cook 5 minutes or until liquid evaporates.





    Spoon turkey mixture over chiles. Top with corn. Carefully spread beans over corn. Sprinkle cheese over beans. Bake at 375掳 for 30 minutes. Let stand 5 minutes; top with chopped tomato and green onions.

    If you like, add beef bullion cubes to the milk and skip the liquid beef broth. Delicious with cooked pasta or as a meatball sandwich.

    Press the stuffing into a baking dish to form a shell about 1/2-3/4 inch thick. Add leftover turkey. Dot with the leftover gravy (no need to thin it - it will thin out as it heats and remelts). Frost with the leftover mashed potatoes. Bake at 350F for 30-40 minutes until heated through, bubbly around the edges and nicely browned on the 'tater peaks. Yum!

    For bone-in turkey, put all ingredients into 5-6 quart crockpot, cover, and cook for 2 hours on high. Then reduce heat to low and continue cooking for 4-5 hours until turkey registers 170 degrees F on instant meat thermometer.





    Some sources now say that 165 degrees F is acceptable for a safe temperature).


    For boneless turkey breast, follow instructions above. When you reduce the crockpot heat to low, start checking the turkey after 1-2 hours. It may only need that much time to reach 170 degrees F.

    I do this quite often. What l like to do is mix some fresh ground pepper and garlic salt up into soft butter. Make a slit on either side of the skin way down low and use a rubber spatula to insert this mixture up under the skin. A bone in turkey breast takes about 6 hours at 225 in my smoker. You want your bird to get to an internal temp of around 170-180.     Here's a good Asian version:





    Ingredients:





    2 cups Leftover roast turkey


    1 tablespoon Light soy sauce


    1 tablespoon Dry sherry or Mirin


    1 tablespoon Vegetable oil


    1 tablespoon Oriental sesame oil


    1 piece Fresh ginger, quarter size -- minced


    2 Green onions -- thinly sliced


    Salt -- to taste


    Freshly-ground black pepper -- to taste


    1 head Belgian endive -- separated into spears


    1/4 cup Finely-diced red bell pepper


    2 tablespoons Chopped cilantro or peanuts


    Directions:





    Cut the turkey into small cubes, making sure to remove all fat and skin. Make a dressing of the soy sauce, sherry, oils and ginger and toss with the turkey and green onions. Season to taste with salt and pepper





    Center the salad on a plate and surround with endive spears. Garnish the salad with red pepper and cilantro or peanuts.

    Smoked Turkey Salad with Strawberries


    What a winner! This no-cook salad is a breeze to put together and looks fancy enough for the most distinguished of guests.





    Creamy Honey Dressing (See Below)


    1 pound cooked smoked turkey or chicken, cut into 1/4-inch strips (4 cups)


    8 ounces provolone or Swiss cheese, cut into cubes


    4 medium celery stalks, sliced (2 cups)


    1 cup honey-roasted cashews


    1 quart strawberry, cut in half (4 cups)


    Salad greens, if desired

    1. Prepare Creamy Honey Dressing.

    Directions:

Place the turkey strips and marinade in a large, zippered plastic bag, press out any air from the bag, and seal closed. Refrigerate for 24 hours, picking up the bag once or twice during that time to redistribute the marinade.


    Preheat the oven to 250掳F.


    Remove the turkey strips from the marinade, drain well, and lay them on a wire rack placed on top of a baking sheet lined with aluminum foil.     1. In a bowl, combine turkey, egg, cracker crumbs, cheese, onion, ginger, and 3 tablespoons mustard.

    4. Bake, uncovered, at 350 degrees for 20-25 minutes or until juices run clear.

    Herb Roasted Turkey Breast with Pan Gravy

    Although sage is the herb most used with turkey, I love the flavor and aroma of fresh bay (laurel) leaves. Fresh bay leaves are now widely available in supermarkets. Since the leaves are a bit woody, and no fun to eat, I baste my turkey with bay-infused butter and roast the breasts right on top of the leaves, which perfumes the meat.





    1 small (golf-ball sized) onion, peeled and coarsely chopped


    1 lemon, scrubbed clean


    12 fresh sage leaves


    Large handful fresh flat-leaf parsley (about 1/2 cup, from 12 stems)


    3 tablespoons extra-virgin olive oil, plus more for oiling pan


    1 teaspoon salt, plus more as needed


    6 fresh bay leaves


    4 tablespoons butter


    2 boneless turkey breast halves, skin on (about 2 to 2 1/2 pounds each)


    Freshly ground black pepper


    3 tablespoons all-purpose flour


    1/4 cup apple or regular brandy (recommended: Calvados)


    2 to 3 cups apple cider


    Salt and pepper





    Preheat the oven to 450 degrees F. Oil a roasting pan and set it aside.





    Put the onion into the bowl of a mini food processor. Using a vegetable peeler, peel the zest from the lemon in thin strips, being careful not to cut into the bitter white pith. Add the lemon zest to the food processor and reserve the whole lemon for another use. Chop the onion and lemon zest until fine. Add the sage, parsley, olive oil, and 1 teaspoon salt and pulse until it forms a coarse paste.





    Put 2 of the bay leaves and the butter into a small pan and heat over medium-low heat until the butter is bubbling. Remove from the heat and set aside.





    Put the turkey breasts on a work surface. Carefully run your fingers between the skin and the flesh from 1 end, being careful not to pull it completely off, creating a pocket. Season the turkey breasts generously with salt and pepper. Stuff half of the herb paste under the skin of each breast, and spread it evenly under the skin. Transfer the breasts to the roasting pan, and slide 2 bay leaves underneath each one. (The heat of the pan will release the bay leaf oils and flavor the breast.) Using a pastry brush, baste the breasts with half of the bay butter. Place the turkey in the oven and immediately decrease the temperature to 400 degrees F. After 20 minutes, baste the turkey breasts with the remaining butter, and roast for an additional 20 to 25 minutes, until cooked through, and a thermometer placed in the thickest part of the breast registers 170 degrees F.





    Remove from the oven, transfer to a platter, cover, and let rest for 10 minutes before carving while you make the gravy.





    Put the roasting pan over the burner on medium heat. Sprinkle the flour over the pan juices, and cook, stirring, for a few minutes. Add the apple brandy, and scrape the pan to lift the bits that are stuck to the bottom. Cook for a minute to burn off the alcohol, then, while stirring, pour in the apple cider. Bring to a simmer, and stir until thickened. Season with salt and pepper.

    If you like, add beef bullion cubes to the milk and skip the liquid beef broth. Delicious with cooked pasta or as a meatball sandwich.








    1 LB ground turkey


    ½ cup unseasoned dry bread crumbs


    ½ cup Romano or Parmesan cheese, finely grated


    ¼ cup whole milk


    ¼ cup low-sodium beef broth


    ¼ cup chopped fresh parsley


    1 egg, beaten


    1 teaspoon dried oregano


    2 teaspoons garlic, minced


    2 teaspoons kosher salt


    2 teaspoons ground black pepper


    1 teaspoon dried basil


    ½ teaspoon dried pepper flakes


    Pinch nutmeg





    Yield: about 16 golf-ball sized meatballs





    Combine all ingredients and stir thoroughly with a fork.


    Bake at 425F for 25 minutes or fry as desired.





    To freeze: place raw meatballs on cookie sheet, 1 inch apart and freeze one hour. Pop the frozen meatballs off the tray and place in a zipper-type baggie. Roll up and return to freezer. To use, bake from frozen at 425F for 30 minutes.

    INGREDIENTS


    3 tablespoons vegetable oil, divided


    1 1/2 pounds ground turkey


    1 (1 ounce) package taco seasoning mix


    1 teaspoon ground coriander


    1 teaspoon dried oregano


    1 teaspoon chili pepper flakes


    2 tablespoons tomato paste


    1 (14.5 ounce) can beef broth


    1 (7 ounce) can salsa


    1 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree


    1 (7 ounce) can chopped green chile peppers


    1 medium onion, finely chopped


    1 green bell pepper, diced


    3 medium zucchini, halved lengthwise and sliced


    1 bunch green onions, chopped


    1 cup sour cream


    1 cup shredded Cheddar cheese











    DIRECTIONS


    Heat 1 tablespoon of oil in a large stock pot over medium-high heat. Crumble turkey into the pot, stirring with a wooden spoon to break apart as much as possible. Season with taco seasoning mix, coriander, oregano, chili flakes, and tomato paste, and mix until meat is evenly coated with seasonings. Continue cooking, reducing heat if necessary, until turkey is well browned.





    Pour in beef broth, and simmer to reduce liquid slightly, about 5 minutes. Add salsa, tomatoes, and green chilies, and continue cooking at a moderate simmer for ten minutes. Adjust the thickness at any time you feel necessary by adding water.





    While chili is still cooking, heat one tablespoon of oil in a large skillet over medium-high heat. Cook onion and green bell pepper, stirring occasionally for 5 minutes, or until onion is translucent and bell pepper is lightly browned. Add onion and bell pepper to the chili, and continue cooking at a very low simmer.





    In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the zucchini, and cook stirring occasionally, for 5 minutes, or until lightly browned. Add the zucchini to the chili, reduce heat, and continue cooking 15 minutes more. Again, adjust the consistency with water as needed.





    Ladle chili into serving bowls. Top with sour cream, green onion, and cheddar cheese, and serve.

    2/3 cup chopped onion


    2 tablespoons vegetable oil


    1/2 pound ground turkey


    1/2 pound hot Italian turkey sausage links, casings removed


    1/2 cup minced fresh parsley


    2 garlic cloves, minced


    1 teaspoon dried oregano


    1 teaspoon dried basil


    2 (14.5 ounce) cans Italian stewed tomatoes


    6 cups chicken broth


    1 medium zucchini, sliced


    1 (10 ounce) package frozen mixed vegetables


    1 (16 ounce) can kidney beans, rinsed and drained


    1 1/2 cups cooked elbow macaroni


    2 tablespoons cider vinegar


    1/2 teaspoon salt


    1 pinch pepper











    DIRECTIONS


    In a large kettle over medium heat, saute onion in oil until tender, about 4 minutes. Add the next six ingredients; cook until meat is no longer pink. Add tomatoes, broth, zucchini and mixed vegetables; cover and cook on low heat for 5 minutes. Add beans, macaroni, vinegar, salt if desired and pepper; simmer for 3-4 minutes or until heated through.

    Stuffed Peppers with Turkey and Vegetables --








    INGREDIENTS


    4 green bell peppers, tops removed, seeded


    1 pound ground turkey


    2 tablespoons olive oil


    1/2 onion, chopped


    1 cup sliced mushrooms


    1 zucchini, chopped


    1/2 red bell pepper, chopped


    1/2 yellow bell pepper, chopped


    1 cup fresh spinach


    1 (14.5 ounce) can diced tomatoes, drained


    1 tablespoon tomato paste


    Italian seasoning to taste


    garlic powder to taste


    salt and pepper to taste











    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C).


    Wrap the green bell peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat.


    In a skillet over medium heat, cook the turkey until evenly brown. Set aside. Heat oil in the skillet, and cook onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach until tender. Return turkey to the skillet. Mix in the tomatoes and tomato paste, and season with Italian seasoning, garlic powder, salt, and pepper. Stuff the green peppers with the skillet mixture.


    Return peppers to the oven, and continue cooking 15 minutes.
    I like to make shepherd's pie with ground turkey, and this is how I make it:





    Brown the turkey. Add some chopped onion and garlic (if you like onion and garlic) or other small vegetable pieces that you happen to have. Diced carrots, corn, peas, and chopped celery are all good. You can leave the veggies out too if you want. Add salt and pepper to taste and a bit of tomato paste if you happen to have any. While you're doing this make some mashed potatoes, either fresh or from a package depending on what you like. Add some grated cheese to the mashed potatoes. Put the turkey mixture in the bottom of a casserole dish and the potatoes on top. Bake at 350 F for 20-30 min, until the potatoes start to form a crust on top. Enjoy! This is a really flexible recipe and the quantities don't really matter. It just depends on what you have and what you like.
    I made this once and it was good, but not special. When I do it again I think I will add some poultry seasoning to it. Good luck.

    • 2 medium onions, chopped


    • 3 cloves garlic, minced


    • 20 ounce package of ground turkey breast


    • 1 T olive oil


    • Salt and pepper (don’t be shy here)

    • ¾ cup Marsala wine

    • 2 cups shredded mozzarella cheese, divided








    Preheat the oven to 375





    Boil the macaroni in plenty of boiling water, to package instructions, but leaving a little on the “al dente” firm side. Drain.





    Meanwhile, brown the meat, onions and garlic in oil, with salt and pepper, until meat is cooked and onion is tender. Drain.





    Bring beef broth and Marsala wine to a boil. Mix flour and water together and add slowly to liquid, whisking and returning to a boil after each time you add some. You want to thicken the mixture to a consistency of gravy.





    Mix the meat mixture, the broth, the macaroni, the peppers, ½ cup of the cheese together. Load into a sprayed 9x13 baking dish, cover with aluminum foil, and put into the preheated oven for an hour.





    Remove cover, sprinkle with remaining cheese, and heat for 5-10 minutes until cheese is melted. Let stand for 10 minutes before serving.
    I have found that you can use ground turkey with great success in any recipe calling for ground beef, with the exception, of course, of hamburgers. You may want to adjust the seaoning a bit and add a wee bit of salt. By the way, if you're moving to ground turkey to cut calories and fat you MUST read the label -- skinless white meat is way down on fat and calories, but other ground turkey is almost the same as ground beef!
    You can make meat balls if you like.





    Add some cracker crumbs, one egg, some soy sauce, fresh ground ginger, splash of hot sauce, dried oregano, salt, pepper--and make them into meat balls.





    Fry those in a pan with some very hot olive oil--keep turning them so they're cooked on all areas.





    You can make an accompanying sauce of your choice--something Asian goes well..maybe with orange juice (or a spoonful of marmalade is good too in lieu of the orange juice) and more ground ginger base and one chicken boullion cube for flavor--add a little water--you can also add the drippings from the fry pan where you cooked the meatballs--sans the grease).bring it to a light boil then turn heat down.....reduce that and add some corn starch to thicken--(not too much...add a bit at a time and keep cooking it on low till it thickens....)





    Then serve those meatballs on a bed of white rice--spoon on some gravy and a side dish of green beans and a sundried and fresh boconcinni salad on the side.--%26gt;%26gt;


    You make that salad with the cheese and fresh basil, olive oil, lemon juice, capers,chopped garlic, salt, pepper and soy sauce.
    ALBONDIGAS SOUP RECIPE--MEXICAN MEATBALL SOUP

    Ingredients for the Broth





    * 1/2 large onion, chopped


    * 1 large garlic clove, minced


    * 1/2 cup of tomato sauce


    * 3 quarts of chicken or beefor beef stock OR water OR a mixture of both (we usually use half stock half water as the meatballs will create their own stock


    * 2 carrots, sliced


    * 1/2 lb of green beans


    * 2 tablespoons of oil





    Ingredients for the Meatballs





    * 1 pound ground beef


    * 1/2 large onion, finely chopped


    * 1/3 cup of raw white rice


    * 1 raw egg


    * 1/4 cup of chopped fresh mint leaves and/or parsley


    * 1/4 teaspoon black pepper


    * 1 1/2 cup of frozen or fresh peas


    * Salt and pepper, for taste


    * chopped fresh cilantro





    Steps





    - Take a med/ld sized pan and heat oil over medium heat. Sautee the onion %26amp; garlic until tender. Next add the broth mixture and tomato sauce. Bring this to a boil and then add the carrots and green beans. Take off the stove until ready to use.





    - In a seperate bowl combine: ground beef,raw egg, uncooked rice, mint, onion, egg, salt and pepper. Form beef into 1 inch meat balls.





    - Bring the soup to a simmer and the meatballs. ONE AT A TIME (I learned this the hard way . . . othewise you'll end up with a lump of meat) Add the chopped cilantro.Cover the pot and cook for about 30 mins. Add the peas towards the end so you don't overcook them. Salt %26amp; pepper if needed.








    Takes about 1 hr to make and serves around 6 people.
    I make meatloaf with turkey! I like it better that way! Just get 1 lb ground turkey, 1 egg, about 3/4 cup Italian flavored bread crumbs, a little ketchup (to make it moist), garlic (and onion if your family likes it) and salt and pepper. I also grate 1/2 cup (or more) zucchini in also to sneak a little nutrition in! Mix well with your hands and form into a loaf and put in pan (some people like it in a loaf pan but I like it to get crispy on the top and the sides so I do it in a 9x13. Bake at 350 about 45 mins to 1 hour depending on your oven. YUM!
    Turkey Croquettes- These are really good especially if you put turkey gravy over top of them when you are ready to eat.





    1. In a saucepan, mix 1 - 1 1/2 cups milk, 1 onion diced fine; chunk of butter, salt, poultry seasoning and sage (all to taste) and bring to a boil. Thicken with cornstarch. Set aside.


    2. Dice cooked chicken. Place in mixing bowl and add milk sauce and 1 well beaten egg.





    3. Mix in cracker crumbs until solid (so that you can make croquette balls).





    4. Roll balls in cracker crumbs - refrigerate.





    5. Bake at 350 degrees until done.





    This is a good recipe for leftover chicken or turkey. You can use as little or as much as you have.
    Minced Turkey Roll.


    1-1½ lbs. Turkey mince


    Mushroom and Onion Stove Top Stuffing.


    Roll turkey out on wax paper in a rectangle shape, 8 x 12 inches.


    Prepare stuffing. Place on top of turkey, an inch from the end. Flatten down.





    Roll the meat and stuffing up like a Swiss roll, using the wax paper to keep it together. Pull waxed paper off as you are rolling.


    Pinch the ends to seal it then pat together.


    Place in pan and bake for 1 hour at 350°F.

    I like turkey burgers with it... use bbq sauce for the condiment or how about some avocado %26amp; ranch dressing with grilled onions.





    I also substitute it for ground beef in a spaghetti with meat sauce.

    Does anyone have an interesting recipe for minced Lamb/Turkey?

    We don't eat beef - but we do eat lamb and turkey. But other than spaghetti bolognese and sheperd's pie we never seem to use any good recipes for minced meat - anyone got any ideas?!

    Spiced Potato and Minced Lamb

    4 medium potatoes


    500 g minced lamb


    1 1/2 teaspoons oil


    1 onion, finely chopped


    2 chilies, finely chopped


    1 tablespoon coriander, finely chopped


    150 g cheese, grated








    boil the potatoes.


    drain them and cut them into cubes.


    fry the lamb until brown.


    heat oil in a pan.

    Middle Eastern Turkey Dogs





    1 teaspoon ground cumin


    1 teaspoon ground coriander seed


    1 teaspoon ground ginger


    1 teaspoon ground cinnamon


    1 teaspoon fresh ground black pepper


    1/4 teaspoon kosher salt


    1 pound ground turkey





    Preheat oven to 450 degrees F (230 degrees C). Spray baking sheet with nonstick cooking spray.


    In a small bowl, mix together cumin, coriander, ginger, cinnamon, pepper, and salt. In a large bowl, crumble the ground turkey; slowly work in seasoning mixture with your hands, distributing seasoning as evenly as possible. Divide into 8 equal balls. On a flat surface, roll out each turkey ball into a tube shape.


    Spray a large skillet with nonstick cooking spray, and set it over medium heat. Place turkey tubes into the skillet; cook, turning frequently, until golden brown on all sides. Transfer to a baking sheet.


    Bake in preheated oven about 6 minutes

    There are lots of greek and middle eastern recipes that call for minced lamb.
    Lasagne, chilli con carne with tacos/wraps/rice, mushrooms and meat pies, pasties, burgers.
    Pitta pockets


    Finely chop a small onion, fry gently until soft, add lamb mince and fry gently until cooked...during the cooking add mild curry powder, about 2 tea spoons to start, a dash of tomato puree and garlic puree (can leave garlic if you don't like it) chilli flakes, and stir in a couple of tablespoons of natural yoghurt and if you have it a dash of mint sauce...keep tasting and adjusting to your own taste...


    When fully cooked add garden peas (frozen) and continue cooking until peas done.


    Warm some Pitta breads, cut Pitta breads in half, open to make a pocket and stuff with mixture...I usually put a bit of chopped cucumber and raw onion in as well,


    Eat in a very sloppy manner, delicious...
