I would stay away from the tofu thing..yeak...Im not a vegan but I have tried getting tofu into my diet...its very hard. There are veggie alternatives like veggie burgers and turkey slices that are actually veggie. Hard to find though apart from the veggie burgers..those are pretty popular and pretty good. Why not make some patties with a nice sauce over them or something like that would be a nice alternative.

hope those help. apparently chickpea powder and soy make a tasty turkey.
Toturkey?

Its tofurky and it doesn't even have tofu in it, or only a little. It is just a fake meat like the rest, it is not made from nothing but tofu, I guess the name gives it a bad disposition. I have never heard of a way to make your own tho.
Just eat an apple, don't try to imitate meat, if you're making it for vegetarians they will probably think it looks like meat, therefore sickening, if not, then it will just taste plasticy and artificial. Apples are nice =)
Try morning star soy products
