Does anyone have a good recipe for ground turkey?

My friend gave us 5 pounds of ground turkey and I need a good recipe for it. Thanks!Does anyone have a good recipe for ground turkey?
How to Make Turkey Meatballs With Pasta





Make the meatballs while the tomato sauce simmers. For juicier meatballs, use ground turkey that has both light and dark meat. Note that this recipe is very low in fat: The meatballs have just 7.3 grams of fat per serving, and the sauce has 3 grams of fat. Serves 6 (1 c. sauce and 5 meatballs).





* 1 tbsp. olive (not virgin) oil


* 1 c. diced onion


* 1 c. sliced mushrooms


* 1/4 c. diced green bell pepper


* 8 crushed garlic cloves - divided use


* 3/4 c. dry red wine


* 3/4 c. water


* 1/2 c. chopped fresh parsley - divided use


* 1 tbsp. sugar


* 1 tsp. dried oregano


* 1 tsp. dried basil


* 1/2 tsp. dried, crushed rosemary


* 1/2 tsp. pepper


* 1/4 tsp. salt


* 2 bay leaves


* 1 28-oz. can whole tomatoes undrained and chopped


* 1 6-oz. can tomato paste


* 1 1/2 lb. ground turkey


* 1/2 c. dry bread crumbs


* 1/2 c. Parmesan cheese


* 1/3 c. finely chopped green onions


* 1/4 c. coarsely shredded carrot


* 1/4 c. coarsely shredded zucchini


* 1 large egg white


* 1 lb. dried pasta





Step1


Heat oil in large saucepan over medium-high heat.


Step2


Add onion, mushrooms, bell pepper and 6 of the crushed cloves of garlic. Sauté 5 minutes.


Step3


Add wine, water, 1/4 c. parsley, sugar, oregano, basil, rosemary, 1/2 tsp. pepper, 1/4 tsp. salt, 2 bay leaves, tomatoes and tomato paste.


Step4


Bring mixture to a boil. Cover, and reduce heat to simmer 30 more minutes, stirring occasionally.


Step5


Preheat oven to 400 degrees F.

Combine turkey, breadcrumbs, Parmesan cheese, green onion, carrot, zucchini, remaining parsley, remaining 1/4 tsp. salt, remaining 1/4 tsp. pepper, egg white and remaining 2 crushed garlic cloves in a large bowl. Combine well.


Step7


Take handfuls of the turkey mixture, and form into 30 1 1/2-inch meatballs.


Step8


Place meatballs on a broiler pan coated with cooking spray.


Step9


Bake meatballs 15 minutes or until cooked through.


Step10


Prepare pasta according to box directions.


Step11


Drain pasta, and divide among 6 pasta bowls.


Step12


Stir baked meatballs into cooked tomato sauce, and ladle evenly over divided pasta. Serve.

3 pounds ground turkey


1/4 cup seasoned bread crumbs


1/4 cup finely diced onion


2 egg whites, lightly beaten


1/4 cup chopped fresh parsley


1 clove garlic, peeled and minced


1 teaspoon salt


1/4 teaspoon ground black pepper





In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.


Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C). serves 12.

Incredibly Cheesy Turkey Meatloaf - Mmmmmmmmm!!





2 pounds ground turkey


1 cup milk


1 cup Italian seasoned bread crumbs


2 eggs


1 teaspoon salt


1/4 teaspoon pepper


3/4 pound Colby cheese, cut into 1/2-inch cubes


1/2 cup ketchup (optional)





Preheat oven to 400 degrees F (200 degrees C).


In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.


Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C). serves 8.

Use some of it to make Potstickers / Asian Dumplings; sub for pork! Then use some to make Deep Dish Taco Squares, subbing your turkey for the beef.








PORK AND GINGER POTSTICKERS





2 cups chopped napa cabbage


1/2 tablespoon salt


1/2 pound ground pork (Don't get lean pork, the fat is good for juicy and flavorful dumplings)


2 tablespoons minced ginger


1 1/2 tablespoons minced garlic


2 tablespoons thin soy sauce


3 tablespoons sesame oil


1 egg


Round wonton wrappers


1 to 2 cups chicken stock or water





Sprinkle cabbage with the 1/2 tablespoon of salt and let stand for 30 minutes. Place the cabbage on a clean dishtowel or cheesecloth and squeeze out any water. The dryer the cabbage the better. In a large bowl thoroughly mix the cabbage with all of the other ingredients, except the chicken stock. Cook a tester to check the seasoning.





MAKING THE DUMPLINGS: Place a small mound of filling in the middle of the wrapper. (Be very careful not to touch the edges with the filling as this will impede proper sealing of the dumplings. Nothing is worse than dumplings breaking during cooking.) Fold the wrapper in half to form a half moon shape. Starting on one end fold/pinch the wrapper tightly together. Proceed with this fold/pinch method until the dumpling is completely sealed. There will be approximately 10 to 14 folds per dumpling. Rest the dumplings with the folded edges straight up.





COOKING THE DUMPLINGS: In a hot saute pan coated well with oil, place pot stickers flat side down and cook until the bottom is browned. Have pan cover ready and add 1 cup of chicken stock, cover immediately. Be careful, the liquid will splatter! The stock will steam the pot stickers. Check them in 5 minutes as more stock may be needed. The trick here is that once the dumplings are firm and fully cooked the stock will evaporate and the bottoms will crisp-up again.





For Dipping Sauce:


1/4 cup red-wine vinegar


1/4 cup reduced-sodium soy sauce


2 tablespoons sugar


1 tablespoon Asian sesame oil


1 scallion, thinly sliced


2 teaspoons grated peeled ginger root


1/4 teaspoon crushed red pepper flakes

Deep Dish Taco Squares





2 cups biscuit mix


½ cup cold water


1( 8-oz )carton sour cream


1/3 cup prepared Ranch salad dressing


1½ pounds ground beef


½ green or red bell pepper – finely chopped**


2 Tbsp. chopped onion**


1 pkg taco seasoning mix (¼ cup)


1 (8-oz) can tomato sauce


½ cup mild salsa


2 cups shredded cheddar cheese





Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.


Combine sour cream and Ranch dressing. Spread over baked crust and set aside.


Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce and taco seasoning mix, spoon over Ranch filling.


Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into 12 squares to serve.





** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce.



I make turkey burgers with yogurt, green peas, shreded carrots, shallots, sea salt, ground pepper, some rice milk soaked multi-grain bread.





Sorry can't give you the exact measurements, I don't cook that way.

4 things I would like to correct you on your potsticker dumpling:


1. You don't put eggs in the dumpling filling, that simply is not how you make authentic Chinese dumplings


2. you don't start making the folds by starting on either end. You pinch seal the middle of the wrap first and them gently make folds with your fingertips and no sane dumpling maker would waste time making 10-14 folds. It's more important to make the dumpling stand on the bottom(therefore less likely to break) than having 14 folds.


3. the cabbage shouldn't be too dry or too wet. The squeezing should get out enough of water so that the filling doesn't get soggy, and some staying in the dumpling to melt into the meat to create lovely flavored juice.


4. Coat the pan with oil, put in the dumplings and fill the pan to reach just above the bottom of each dumpling(chicken stock is too much, for my taste) and close the lid first to let the steam cook the filling then after 3-5 minutes(till the filling looks pinkish and skin opaque) open the lid to let the oil crisp the skin. The way you do it, will get the skin too tough or even burned because that's what the wraps do when they are cooked dry.
I add 1 teaspoon of the powdered type beef boullion to each pound of ground turkey and stir it in and let it set in the fridge for about an hour before I use it...This gives the ground turkey more of a ground beef flavor..Then use it the same as you would any ground beef...Remember to decrease the salt a bit as the boullion has alot of salt in it.

I don't know if you family likes tacos and nachos like mine does, but we use ground turkey 90% of the time!!! Just season it with taco seasoning or make your own and put it on your tacos! We make nachos by heating up a baking tray full of corn chips sprinkled with seasoned ground turkey, sliced spring onions, jalapenos and cheddar. Sometimes, we don't even heat up the chips! Just grab a bunch right out of the bag and load 'em up with all the fix ins!!!!


and then we ';gobble'; them right down!


p.s, if the turkey is white meat, you might want to add just a touch of olive oil to the pan so that it doesn't stick or become dry.

Look at The Turkey Store site and they have some good recipes. I love the ground turkey in meatballs. I do use it in the spaghetti sauce and have made meatloaf with it as well. Just use it where ever you would use ground beef.
You can use it in any recipe for ground beef, but use as much as double the herbs you would normally use (turkey has less flavor). Meatloaf and meatballs are good choices - or hamburgers
We usually use turkey in place of hamburger. Its healthier.
