SIMPLE PERFECT ROAST TURKEY

INGREDIENTS

1 (18 pound) whole turkey

1/2 cup unsalted butter, softened

salt and freshly ground black pepper to taste

1 1/2 quarts turkey stock

8 cups prepared stuffing

DIRECTIONS

Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.

Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.

Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 180 degrees F (80 degrees C), about 4 hours.

Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.
wash the turkey with veniger and leaf to drain, afterwards cut straigth lines on the bird and rub in the peast of spaice you have.but make sue that there is either onions or garlic in the peast of spaice and leaf to absolve it in then add vegitable oli to it and then steam for about 30 to 40 mins.
Grab a large tub of butter and a spatula, coat turkey with butter with 1/2 of the tub. Depending on how large your turkey is you will need to add water to the pan. Smallest turkey at least 2 cups to start. after turkey is coated with butter sprinkle poultry seasoning allover. Pre-heat oven 350. If you start your turkey at 9 am it should be done by 1-2 pm. You'll want to baste your turkey and hour after you put it in the oven and constantly every half hour to 45 min's after that adding butter to turkey every time. You should come out with a deliciously moist golden Turkey.
Easiest way I have eaver done it is to butter the skin, sprinkle with oultry seasoning.

Pop it in a pre-heated 500 degree oven before going to bed, turn the oven off once you pop it in and go to bed and forget about it.

Perfect the next morning.
