Use some of it to make Potstickers / Asian Dumplings; sub for pork! Then use some to make Deep Dish Taco Squares, subbing your turkey for the beef.

PORK AND GINGER POTSTICKERS

2 cups chopped napa cabbage

1/2 tablespoon salt

1/2 pound ground pork (Don't get lean pork, the fat is good for juicy and flavorful dumplings)

2 tablespoons minced ginger

1 1/2 tablespoons minced garlic

2 tablespoons thin soy sauce

3 tablespoons sesame oil

1 egg

Round wonton wrappers

1 to 2 cups chicken stock or water

Sprinkle cabbage with the 1/2 tablespoon of salt and let stand for 30 minutes. Place the cabbage on a clean dishtowel or cheesecloth and squeeze out any water. The dryer the cabbage the better. In a large bowl thoroughly mix the cabbage with all of the other ingredients, except the chicken stock. Cook a tester to check the seasoning.

MAKING THE DUMPLINGS: Place a small mound of filling in the middle of the wrapper. (Be very careful not to touch the edges with the filling as this will impede proper sealing of the dumplings. Nothing is worse than dumplings breaking during cooking.) Fold the wrapper in half to form a half moon shape. Starting on one end fold/pinch the wrapper tightly together. Proceed with this fold/pinch method until the dumpling is completely sealed. There will be approximately 10 to 14 folds per dumpling. Rest the dumplings with the folded edges straight up.

COOKING THE DUMPLINGS: In a hot saute pan coated well with oil, place pot stickers flat side down and cook until the bottom is browned. Have pan cover ready and add 1 cup of chicken stock, cover immediately. Be careful, the liquid will splatter! The stock will steam the pot stickers. Check them in 5 minutes as more stock may be needed. The trick here is that once the dumplings are firm and fully cooked the stock will evaporate and the bottoms will crisp-up again.

For Dipping Sauce:

1/4 cup red-wine vinegar

1/4 cup reduced-sodium soy sauce

2 tablespoons sugar

1 tablespoon Asian sesame oil

1 scallion, thinly sliced

2 teaspoons grated peeled ginger root

1/4 teaspoon crushed red pepper flakes

Deep Dish Taco Squares

2 cups biscuit mix

½ cup cold water

1( 8-oz )carton sour cream

1/3 cup prepared Ranch salad dressing

1½ pounds ground beef

½ green or red bell pepper – finely chopped**

2 Tbsp. chopped onion**

1 pkg taco seasoning mix (¼ cup)

1 (8-oz) can tomato sauce

½ cup mild salsa

2 ½ cups shredded cheddar cheese

Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.

Combine sour cream and Ranch dressing. Spread over baked crust and set aside.

Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce and taco seasoning mix, spoon over Ranch filling.

Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into squares to serve.

** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce

Turkey tacos. Follow the recipe on the taco kit or seasoning packet but use the ground turkey instead of ground beef.

or, and my favorite...

Asian style turkey dumplings. in 1 lb ground turkey mix 1tsp sesame oil, 1tsp olive oil, 2TBS soy sauce, fresh ground pepper, 5 dashes worcestershire sauce, 4-5 chopped scallions, greens and all, 1 TBS fresh chopped cilantro, 1 tsp sugar, about 1/2 cup finely chopped shitaki mushrooms, stems removed, 1 small can water chestnuts drained and finely chopped and 1 TBS cornstarch. Mix all very well. Make dumplings either in wonton skins (found in the produce dept) or dumpling skins found in asian markets. I make a ton then freeze them since forming the dumplings is time consuming. Then I simple throw them in boiling water or chicken broth turned down to a simmer with a few bay leaves until they float to the top then let them simmer for 2 more minutes. I serve them with a dipping sauce made with soy sauce, sesame oil, , honey, more chopped scallions and lots of red chili flakes. So yummy!

1 lb. ground turkey

Trying to alter recipes around our house for healthier eating often meant giving up flavor. I have found that browning ground turkey in wine, garlic and onions gives a marvelous flavor to the fowl, without adding fat, cholesterol or sodium! I use my now great tasting turkey as a substitute for ground beef in spaghetti, chili, etc
If you put white Worcestershire sauce in turkey burgers before cooking, they are sooo good. You can also make a stir fry with some ground ginger, celery, carrots, and whatever other vegies you like.
american goulash, turkey burgers, chili, spaghetti sauce, anything you can do with ground beef, you can do with ground turkey.
My mom buys ground turkey all the time...Usually she makes turkey burgers with them. Occasionally, she'll make spaghetti. She doesn't eat it though. And she usually cooks A LOT so we don't eat it all.
