What's the best recipe for a low-fat turkey meatloaf?

My low Carb recipe














Italian Turkey Loaf











1 Medium spaghetti squash


1 lb of ground turkey


1 egg (or 2 egg whites)


1 14.5 can of diced tomatoes


1 small onion chopped (divided)


1 med. cloves of garlic minced (divided)


2 tbsp oregano (divided)


2 tbsp basil (divided)


2 tbsp grated parmesan cheese (divided)


no-stick spray olive oil





Preheat oven 350 degrees. Slice squash lengthwise remove seeds. Spray inside w/ no stick olive oil spray (salt if desired). Set aside cavity side up.











Mix together ground turkey, half of minced garlic, half of chopped onion, 1 tbsp Parmesan, 1 egg (or 2 egg whites), 1 tbsp oregano, and 1 tbsp basil. Divide meat loaf mix %26amp; fill each cavity packed firmly. Place in 9 x 13 cake pan cover w/ foil. Bake 45 minutes, remove foil, sprinkle w/ 1 tbsp Parmesan bake uncovered 15 minutes.











While main dish is baking saut茅 remaining onion %26amp; garlic in small no-stick sauce pan (use minimum no-stick spray) until soft %26amp; transparent, add can of diced tomatoes, remaining basil %26amp; oregano bring to boil then reduce heat to simmer, stirring occasionally as it thickens.











Makes 4 servings, 8 carbs per serving. Approximate 240 calories per serving. Rounds out nicely w/ a side salad:)

In the kingdom of comfort food, meatloaf is royalty. Rich in carbs and fat, it fills you up and makes you feel good 鈥?that is, until your waistband becomes too tight. To get the comfort without the calories, try this version. We鈥檝e cut the fat in half by using 93 percent lean ground turkey instead of ground beef chuck, and opted for fat-free milk, which still keeps the loaf plenty tender. Even more soothing: You don鈥檛 have to give up the beloved ketchup glaze.





INGREDIENTS





1 tablespoon(s) olive oil


2 stalk(s) (medium-size) celery, finely chopped


1 small onion, finely chopped


1 clove(s) garlic, crushed with press


2 pound(s) lean ground turkey


3/4 cup(s) (from 1 1/2 slices bread) fresh whole wheat bread crumbs


1/3 cup(s) fat-free milk


1 tablespoon(s) Worcestershire sauce


2 large egg whites


1/2 cup(s) ketchup


1/2 teaspoon(s) salt


1/4 teaspoon(s) coarsely ground black pepper


1 tablespoon(s) Dijon mustard





DIRECTIONS





1. Preheat oven to 350 degrees F. In 12-inch nonstick skillet, in oil, cook celery and onion on medium 10 minutes or until vegetables are tender, stirring occasionally. Add garlic and cook 1 minute. Transfer vegetables to large bowl; cool slightly.


2. To bowl with vegetables, add turkey, bread crumbs, milk, Worcestershire sauce, egg whites, 1/4 cup ketchup, 1/2 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper; mix with hands until well combined but not overmixed. In cup, mix Dijon and remaining 1/4 cup ketchup.


3. In 13'; by 9'; metal baking pan, shape meat mixture into 9'; by 5'; loaf. Spread ketchup mixture over top of loaf.


4. Bake meatloaf 55 to 60 minutes or until meat thermometer inserted in center reaches 160 degrees F. (Temperature will rise to 165 degrees F upon standing.)


5. Let meatloaf stand 10 minutes before removing from pan to set juices for easier slicing. Transfer meatloaf to platter and cut into slices to serve.

TURKEY MEATLOAF (Low fat)





1 1/2 lbs. ground turkey


1 egg (or egg substitute)


1 c. fresh bread crumbs (2-3 slices bread)


1 tbsp. Parmesan cheese


1 tbsp. fresh chopped parsley


3 tbsp. chili sauce


1/2 pkg. chopped spinach (thawed and well drained)


Fresh ground pepper (to taste)


1/8 tsp. Mrs. Dash (herbs and spices)


2 cloves garlic, finely minced or use Lawry's garlic powder - approx. 1/2 tsp.





Preheat oven 350 degrees. Bake in a pyrex or Teflon pan for 35-40 minutes.


Mix (well) above ingredients. Shape into a loaf. Spread with 1 tablespoon chili sauce. Place on bottom rack of oven.





Serve hot as a main course or cold as a sandwich filling or lunch platter.





Save 1 tablespoon for spreading on loaf.
Turkey Meatloaf


1 egg


3/4 cup bread crumbs( Italian style contadina)


garlic powder


oregano


Italian seasoning


cumin


chili powder


basil


1 1/2 lb ground turkey


1/2 cup chopped onion


1/4 cup catsup


Mix ground turkey with egg, onion, spices and bread crumbs in mixing bowl and form into a loaf. Place in loaf pan and bake at 350 degrees for about one hour, during the last fifteen minutes of baking spread catsup on top of the meatloaf and finish baking. Serves 6-8 people. Serve with a side dish of mashed or baked potato or macaroni cheese
Ground turkey is already low in fat. To a couple of pounds of ground turkey add bread crumbs, packaged meat loaf seasoning, an egg, a small can of tomato paste. (If you like, about a cup of frozen vegetable: carrot, corn and peas mixed). After you shape on your baking sheet, or in your loaf pan, make a groove on top with your finger and fill with catsup. Bake at 350 for about 40 minutes covered with foil; then uncover and continue baking for another 10-15 minutes so the top gets crunchy and delicious.
Healthy Turkey Meatloaf








Ingredients;


1/2 pound ground turkey


1 egg


1/4 cup salsa


1/8 cup chopped red bell pepper


1/8 cup chopped yellow bell pepper


1/4 cup chopped onion


1/4 cup dry bread crumbs


lemon pepper to taste





Directions;


Preheat oven to 350 degrees F (175 degrees C).


In a large bowl combine the turkey, egg, salsa, red bell pepper, yellow bell pepper, onion, bread crumbs and lemon pepper. Mix well with hands until blended. Press mixture into a loaf pan.


Bake in the preheated oven for 25 minutes.
